Tastes of Chicago – Lou Malnati’s Deep Dish Chicago-Style Pizza

Lou Malnati’s Pizzeria is an American Chicago-style pizza restaurant chain that has become one of the Chicago area’s best-known pizza restaurants. Lou Malnati’s also operates a division of its company called Lou Malnati’s Presents Tastes of Chicago, a partnership with Portillo’s Restaurants and Eli’s Cheesecake, which ships Chicago-style cuisine nationally.

Lou Malnati’s is a prototypical Chicago style pizza, and its deep dish pizza is generally referred to as a “pie.”

A thin crust of pizza dough is laid in a seasoned deep-dish pizza pan and raised up on the sides. The ingredients are placed on a Chicago style deep-dish pizza in the opposite order of a thin crust pizza. The first ingredient is thick slices of mozzarella cheese that are placed directly on the dough. Then additional ingredients like mushrooms, onions and sausage are spread on top of the cheese. Now Open: UNCLE SUNG Chicken + Rice and Doshibox Korean Kitchen Open as a Virtual Kitchen in Orlando

UNCLE SUNG Chicken + Rice, a new virtual concept that will be launching as a weekly pop-up,  officially opened in Orlando on Saturday, December 19th. The concept showcases Singapore-style Hainanese Chicken Rice as its signature dish, which will be available exclusively for online orders and through Ubereats and Doordash delivery.

Also, Doshibox Korean Kitchen, a new virtual concept that will be launching as a weekly pop-up, has officially announced that it will be opening on Friday, January 15th, 2021, in the COLLAB KITCHEN at 4400a Curry Ford Rd. Doshibox will be available for pickup through online preorders and for delivery through Ubereats and Doordash.

UNCLE SUNG Chicken + Rice and Doshibox Korean Kitchen both operate out of COLLAB KITCHENS, a new virtual food hall established by local restaurateurs, Jimmy and Johnny Tung.

Nestled in an unassuming Publix strip plaza at 4400 Curry Ford Road in the Curry Ford West area, the 2,400 square ft. kitchen will incubate new and exciting local chef-driven concepts offering carryout and delivery only.

Each concept will be featured movie-poster style on the windows of the storefront, and will have the potential to evolve into brick-and-mortar locations down the line.

The space is currently shared by BENTO Asian Kitchen + Sushi, Domu Wings, Lucky Dragon Chinese Takeout, and Doshi Box.

UNCLE SUNG Chicken + Rice

UNCLE SUNG is the first to bring Singapore-style Hainan Chicken Rice to the Orlando area. The dish, which originated in Hainan, China, is composed traditionally of poached, organic chicken and garlic rice cooked in chicken stock accompanied by ginger scallion and garlic chili sauce.

Born-and-raised in Indonesia, Chef Ray Sungadi visited Singapore often as a child. He regarded Singapore as his second home, and it’s signature dish his favorite growing up. With the opening of UNCLE SUNG, Sungadi sought to bring a little piece of home to the Orlando food scene.

“Since I moved to Orlando 20 years ago, I’ve been on the hunt for good Hainan Chicken Rice that reminded me of home, but I never seemed to find it. The gleaming chicken, that steamy mound of oiled rice, and that big bowl of broth was the sort of simple, but delicious dish I found comfort in as a kid, and became homesick for later as an adult,” says Sung.

“Launching as a virtual kitchen is a great way for UNCLE SUNG to get its feet wet, and to work alongside other local chefs. We’re eager to see where it takes us,” says Sungadi.

Doshibox Korean Kitchen

Doshibox’s main offering will be a Doshirak, which will feature a choice of protein, such as Beef Bulgogi, Braised Tofu, and Korean Fried Chicken, accompanied by a revolving selection of side dishes or “banchan ”. The menu will also feature build-your-own rice and noodle bowls. All side dishes will also be available for purchase, along with an assortment of appetizers. The concept’s namesake originates from the term “Doshirak ” which means a packed meal, typically carried in a box. Boxed lunches offer a well-balanced, varied selection that fits neatly into a carryout package, and can be found throughout Asia, e.g., the Bento Box.

“Our mission is to explore the gastronomy scene of Korea, which offers many amazing flavors and preparations. We want to offer a food experience to our guests that encompasses special preparation techniques, unique and seasonal ingredients, holiday recipes, and street food,” says Gene Kim, co-founder.

The restaurant will be overseen by Gene Kim, along with co-founders, brothers Michael and Ray Gillette. Seasoned veterans of the culinary industry, the three Chef partners will bring a combined 35+ years of restaurant experience to the concept. Together the Doshibox team will be working on new, exciting concepts in the future.

“Doshibox is about creating our progressive take on handcrafted, traditional Korean food, conveniently served in a box. Each box holds many different elements with each one needing special attention to detail during preparation. We won’t be taking any shortcuts, because every item makes a difference.” says Ray.

“Korean cuisine revolves around the idea of preservation, which is about developing special flavors through patience. This technique allows what are normally seasonal ingredients to be enjoyed year-round all while minimizing food waste. Lacto-fermentation has been trending more recently because of its added health benefits, but we plan to incorporate all methods such as drying and aging as means of preservation.” says Gene.

 

Inside Look: Chef Yoshi Pintar at Lombardi’s Seafood

Chef Yoshi Pintar (formerly of Sushiman) can now be found at Lombardi’s Seafood Cafe (news here) serving up delicious sushi rolls, nigiri, and poke bowls.

He recently served us some off the menu items like the gorgeous chirashi bowl and tuna avocado sushi dish shown here, showcasing his depth of skill with knife carving.

He is an expert at Mukimono which is the traditional Japanese art of decorative garnishing.

Examples of this include carving into skins of fruit and vegetables, as well as carving vegetables (such as daikon, carrot, eggplant) into attractive shapes such as flowers, twists, and fan shapes. His former master was one of the top chefs in Japan.

New Elevated Wine Tasting Experiences with Kcuvée Wine Education & Consulting

Kcuvée is a new kind of elevated wine school founded by best friends Katie Bean and Carolina Marin, who share a passion for wine, travel, and entertaining friends and family.

The name, Kcuvee comes from cuvee, a type, blend, or batch of wine, especially champagne and the K and C from KCuvee comes from the first initials of Katie Bean and Carolina Marin.

Together, they developed the Kcuvée curriculum that turns the formal wine seminar into the happiest of hours.

Tasty Chomps’ Interview with Katie Bean + Carolina Marin, Founders of KCuvee

Tasty Chomps Tell us about yourselves and your respective backgrounds.

Katie:

I grew up in England and travelled all over Europe at any early age. My family has always been very into entertaining and my mum had the best dinner parties, my dad was an entrepreneur. It was very natural for me to follow in their footsteps, I developed a passion for curating experiences and turned that passion into business. I love to create new concepts, or help others fulfill their dreams.

In 2013 I launched My VIP Tour, which is a concierge service specializing in Disney Vacations. In 2017 I launched a luxury travel agency called Katie Bean Travels to be able to offer the same high-end service we give here in Orlando but all over the world. My incredible teams at both businesses allow me to manage everything from the outside so I can do what I do best. In 2020 when the world came to a standstill, Carolina and I decided to join my 15+ years as an entrepreneur with her 15+ years in wine education, to create a course that’s both educational but also fun. I’m currently training under Carolina to learn everything I can about wine. It has been quite the journey! I live in Orwin Manner with my husband and two children, Henry & Rose.

Carolina:

I was born in Venezuela, graduated as a Bachelor in Business, completed my MBA part in IESA-Venezuela and part in Università Bocconi in Milan. I worked for multinational companies in Marketing and Project Management until started my first business: a wine and spirits distribution company. Enrolled at the Venezuelan Academy of Sommeliers, graduating as valedictorian in 2012.

Thirsty for more, I completed the WSET Level 2 at the L’EVS (l’Ecole des Vins et Spiritueux) in Paris, studying the course in French (Level 3 was later completed in London). I’m currently a WSET Diploma (Level 4) candidate and a French Wine Scholar candidate. I am also a certified WSET educator. Moved to the US in 2014, I’ve been happily married for 15 years to Jose, the love of my life, we have a precious 6-year old daughter named Caterina.

How did you two meet?

Katie: Carolina was the room mum in my daughter’s kindergarten class. When we met there was an instant spark and I immediately invited her to a dinner party I had been planning for months. I found out shortly before that she was a Sommelier so we had her open and serve a pinot noir from Burgundy that had been sitting in my father in laws basement for 25 years. It was a magical evening that led to many more fun evenings with delicious food and wine and the best conversation.

Tell us about the time(s) you first fell in love with wine?

Carolina:

I grew up in a country that had a very strong Spanish, Italian and Portuguese influence. Family gatherings are always about good food and wine. I can’t remember the first time I had wine but I do remember when I started loving it. While working for Diageo Colombia-Venezuela one of the projects was the launching of Santa Rita and Navarro Correas wines in Colombia.

Once I started to understand the magic behind food and wine pairing and how they make each other better when they are the right fit. I knew it was the beginning of my wine journey. My second Aha moment was in Milan, when I realized that I was missing part of the experience of living in Italy and traveling around Europe because I didn’t know enough about wine. That’s when I decided to join the Sommelier Academy. That experience completely transformed the way I travel, the way I entertain and the way I host and live my life. I haven’t stopped studying wine since then.

Katie:

I can remember being at the Atlantis in the Bahamas when I was 18 years old. My dad and his friend were drinking Santa Margarita Pinot Grigio and asked me if I wanted a glass (the drinking age is 18 there). Pinot Grigio is so light and easy to drink that it was the first time I had really enjoyed wine. I remember how it made me feel, pinky up and all lol. Like most, my palate has changed drastically over the years and I now love more bold red wines but I’ll always remember that moment.

How did the concept of Kcuvee come about? What is Kcuvee for the new people out there? What do you hope to achieve through this new project?

Katie: Carolina has been studying wine for the past fifteen years and has always dreamed of having her own wine school. As an entrepreneur I thought it was a fantastic idea and believed it could be a huge success in Orlando. She would pick my brain for ideas and explain what the concept was but because of her training as a Som, it was very heavy on the educational part. I thought it needed to be a bit lighter and more approachable so that everyone in Orlando could enjoy it, not just people who wanted to join the industry. One day out of nowhere she said, “you just need to do this with me!”

It was an exciting concept I couldn’t refuse and so Kcuvee was born. It was a time where travel had come to a complete halt and I needed a new vehicle to drive my creativity so we poured ourselves into it. It was the best decision we have ever made.

I’ve never had a partner before so I was a little nervous but I couldn’t’ have found a better one. Carolina is so passionate about what she does and she’s very patient with me! lol We work extremely well together.

Kcuvee is a two part business, our focus is wine education but also wine consulting. Our goal is to take the traditional wine seminar that is sometimes boring and very heavy on theory and blend it with the more fun, light hearted wine tasting to create an event that is both fun and educational.

We have a very hands on approach that is interactive and gets the guests engaging their senses. We believe that the more you know about wine, the more you enjoy it but we want to educate our guests in a way that’s approachable. On the consulting side, we understand that not all restaurants have the luxury of having their own sommelier.

We believe that there is no five star dining experience without a great wine list, so we offer wine list consultation and staff training that helps the restaurant highlight it’s menu and enable it’s team to sell and pair accordingly.

Our overall goal is to truly elevate the wine scene here in Orlando which we believe is possible through education.

Tell us about the Wine and Spirits Education Trust (WSET) and the different levels and what they mean for the uninitiated?

Level 1 – Basic wine concepts. Basic service and wine pairing knowledge. Intensive fromat duration: 1 day
Level 2 – Key labeling terms, exploration of main grape varieties from main wine regions of the world. Intensive fromat duration: 3 days
Level 3 – The key factors in the production of wine: location, grape growing, winemaking, maturation and bottling and how the influence the style of the wine. Intensive fromat duration: 5 days
Level 4 – Wine production, wine business, still, sparkling and fortified wines in depth. Duration: 18 months – 3 years

What do you have planned for Kcuvee for 2021?

This year it’s all about spreading the word, creating brand awareness and building our network. We have joined FRLA (Florida Restaurant and Lodging Association), the Winter Park Chamber of Commerce and plan to dedicate time to networking and events. We will have two scheduled courses each month at the Emeril Lagasse Foundation Kitchen House & Culinary Garden but custom/private events will be our focus this year. Our goal is to create tailor made private events for Corporate clients and individuals looking to entertain and wow their clients, team or friends. We also plan to incorporate travel into our year so that our guests can visit wineries and restaurants with us.

Personal and business resolutions for 2021?

Carolina
Personal: become better at Yoga, do more outdoor activities with the family and get a dog for my daughter
Business: become a WSET provider, establish a network of corporate clients and create a wine guide.

Katie
Personal: I want to support my community as much as possible, shop local, and give back more. And to travel again!
Business: To gain my level 2 and 3 WSET certificates and roll out two food and wine curated trips. We currently have a four day Napa trip in the works for early summer as well as an eight day trip to France where we will visit Burgundy and Beaujolais.

What are some things you learned in 2020?

Even under the worst circumstances, amazing things can happen and it all depends on you. 2020 made us stronger, our creativity flourished and we were able to reinvent ourselves. We started a beautiful in person wine academy in the middle of a pandemic. The results and the receptivity of people has been overwhelming. we are beyond grateful.

What is your current favorite drink right now? What do you like to pair with those drinks?

That’s a hard question to answer, we like all wines and most food. We enjoy a New Zealand Sauvignon blanc with mussels as much as we enjoy a steak with Cabernet or a chocolate cake with a glass of Tawny Port. It’s all about the occasion, the food and the company. There’s a perfect wine for each occasion.

1. Gringos Locos Tacos

Gringos Locos is a Central Florida staple, and for good reason. With multiple locations throughout Orlando from downtown to UCF, this beloved taco shop is open daily until 3 a.m., making it the ideal stop after a night spent bar-hopping. Their tacos are fresh, affordable and they consistently hit the spot.

2. B-Line Diner

Open 24 hours a day, B-Line Diner is located inside the Hyatt Regency Orlando resort. This spot has the traditional diner feel, with a special late night menu from 11 p.m. to 6 a.m, which includes all-day breakfast, sandwiches and even a number of vegan options like the Open Faced Beyond Burger and the Vegan Burrito.

For late night Asian Fusion cuisine 24/7, Bao’s Castle is the perfect choice. Bao’s Castle offers a variety of delicious bao bun creations, with filling options that include pork belly, Korean short rib, fried shrimp, fried chicken, braised short rib, fried soft crab shell, tofu and mushrooms, all of which are less than $5 each. They also serve some tasty sides, rice bowls and churros.

Santiago’s Bodega is a wonderful tapas restaurant open until 2 a.m. every night. This restaurant offers a diverse range of food, from Bruschetta to Croquettas to Spanakopita. There’s sure to be something for everyone to enjoy at Santiago’s Bodega.

5. Pom Pom’s Teahouse & Sandwicheria

Pom Pom’s Teahouse & Sandwicheria offers some of the best tea and sandwiches in all of Orlando. Our all-time favorite menu item is Mama Ling Ling’s Thanksgiving Sandwich, pictured below in all of its glory. Pom Pom’s is open until 4 a.m. every Friday and Saturday. It’s located just east of downtown Orlando, making it the perfect stop after a night out.

6. Tin & Taco

Tin & Taco offers some of the tastiest and most unique craft tacos, craft beer and craft sodas you can find in Central Florida. It has locations in SoDo, College Park, downtown Orlando, Winter Park, Lake Mary, Waterford Lakes and New Smyrna Beach. The hours for each location are slightly different, but the downtown Tin & Taco is open until 3 a.m. daily. Their tacos are truly unlike any others, and are definitely worth a try.

7. The Waterfront Orlando

Open until 2 a.m. all week long, The Waterfront Orlando offers an impressive array of seafood, burgers, salads and sandwiches. 9. American Social

Known for serving up some of Orlando’s best burgers, American Social provides a more upscale sports bar experience with some really delicious bites. Where else can you order avocado toast, burgers, tacos, oysters and pan-seared salmon all at one place? American Social is open until midnight, 1 a.m. or 2 a.m. depending on the day, and is certainly worth visiting.

Interview: Big Fin Seafood Kitchen’s New Executive Chef Eric Enrique

The pandemic this past year sent shockwaves throughout the restaurant industry, including right here in Central Florida. Restaurants had to adjust, shift sails, and make things work for the new reality.

In 2020, Big Fin Seafood Kitchen underwent ownership changes, and with that there were a new Executive Chef brought on board  – Chef Eric Enrique, formerly of Eddie V’s Seafood and Steaks down the street. We spoke with Chef Eric about his background from cleaning 50 lb boxes of veal bones to his plans for Big Fin in 2021.

Tell us about your background – where did you grow up and how did you get started into food?

I was born in Hawaii and spent my first five years there. Growing up in Hawaii you just learn to respect the Ocean and all the beautiful bounty that those waters have to offer. Your typical grocery store in Hawaii will offer the highest quality seafood that you would come to expect from our higher end purveyors on the main land.

After my father retired from the Navy, we moved Northern California ( The San Francisco Bay Area). My first job kitchen job was making sandwiches, salads and espressos at a small café.

I then graduated from The California Culinary Academy in 1997. One of the requirements before graduating was to intern in a restaurant for 6 months (full time) so I knocked on the backdoor of every nice restaurant in town until I was finally accepted by a Chef to let me do my internship.

I was persistent. I must have knocked on a dozen doors until I was told by the Sous Chef of Massimo’s Restaurant to come back to the restaurant the next morning to start.

The first thing the Chef did was hand me a 50 pound box of bloody veal bones and told me to wash them under the sink so that the stock would not be cloudy. I was hooked.

Cooking in Northern California you come to appreciate a deep cultural mix of cuisines. The rich diversity in agriculture and micro climates makes Northern California famous for some of the best wines in the World. It is impossible to deny that California has left an impression on my Culinary Mind.

What is the moment that you realized you wanted to become a chef?

The moment I was able to cook in 5 different pans and manage all the tickets coming in without stress and actually have fun.

The biggest lessons you’ve learned so far as a Chef:

  • Start with the best ingredients.
  • Integrity is Everything.
  • “Mise en Place” is a state of mind – it means that the way you organize your work and your life will guide you to success or failure.

What are some childhood memories around food that sticks with you to this day?

Eating my Grandma’s perfect Garlic Fried Rice. She could toast the garlic so perfect. It was toasted without being burnt. A very difficult thing to accomplish.

As the new executive chef of Big Fin Seafood Kitchen, what are some upcoming plans that you have for the menu and restaurant? What are some changes that guests might see? What are some goals you have for Big Fin in 2021?

The changes to menu are subtle, including some new additions to the bar menu. The goal for 2021 is to continue Big Fin Seafood’s mission to have the freshest and best quality seafood in Orlando.
Scallop Ceviche – Thinly Sliced, Marinated in Coconut Milk and Lime Juice

One of the new dishes is the scallop ceviche. The dish tastes well-balanced with the perfect amount of acidity and tastes very different because we add fresh coconut milk.

Another new popular dish is the whole fried snapper. The presentation of the fish just looks amazing and it is very unique to Big Fin.

What are the most popular dishes right now at Big Fin?

Our Swordfish! The freshest available and it’s a huge 14 oz steak cut.

What are some lessons you have learned during 2020?

One of the biggest lessons I have learned during 2020 is that you cannot run a restaurant from a place of fear. If you have the right protocols in place to protect the guests and workers you need to push forward and operate a restaurant from a place of integrity.

What are some personal resolutions you have for 2021?

Be relentless in our approach to providing the highest quality seafood and steaks to our Guests.

Your best tips for picking the best seafood?

  • The nose never lies. Good seafood or fish should smell like the ocean or have little to no smell at all.
  • If you can check the under the gills of the whole fish the color should be bright red.
  • Also check the eyes of the fish. The eyes of the fish should look clear and not cloudy.
  • The best tip is to build a good relationship with your fish/seafood purveyors.

Tell us about your family’s background and how the business got started?
Our journey to starting Full Press Juicery has been in the making with us as a family becoming more health conscious. We have had family members become Vegan, others have lost weight and been able to maintain that weight loss.

Even our get-togethers started to include more healthier food options. As a family, we gather for the holiday season and this particular year, we were in San Antonio, Texas 2018. It is the time of the year where we gather around the table for delicious food, competitive game nights and simply good laughter.

During this year, we came up with making some juices with a regular juicer and we started tasting them. At first, it was a joke of selling our homemade juices in stores and then things turned serious about drafting a plan to make it a reality. We were talking about the disparities in the minority communities, and benefits of fresh produce to facilitate the busy professionals and gym enthusiasts who wants to maintain a healthy lifestyle. So, we started to think. Hmmmm.

How do we give back was primarily our aim, while educating and keeping folks healthy….Hence, Full Press Juicery was born.

Our operations partner Lydia has labored in the food industry for over twenty-seven decades, with a Hospitality Management & Culinary Degree she’s seen it all.

Her level of experience with running the back of the house and front of the house operations and strong menu development skills, helps us development authentic and harmonious recipes.

We can continue to enlarge our footprint in a strong & competitive market which are complements her passion and drive to making our communities healthier one juice at a time.

Tell us about the name behind Full Press juicery?

The name Full Press Juicery highlights the process we utilize to create our beverage products. We take several pounds of fresh fruit & vegetables placing them under thousands of pounds of pressure utilizing a cold pressure machine, extracting all the nutrients and vitamins. Thus, producing a delicious way to consume fresh fruits and vegetables with no added water or preservatives or sugar added.

What are your current plans for 2021?

Our current plans for 2021 is to continue to make a healthy impact in our community one delicious juice at a time. We look forward to expanding our menu to include more juice flavors, smoothies, and food items, building long-lasting relationships, and incorporating local delivery.

Pom Pom’s Teahouse and Sandwicheria, one of Orlando’s most iconic independent restaurants, will be celebrating their 15th year in business for 15 days, starting on their anniversary, December 26, 2020.  The fifteen day celebration was created with social distancing in mind, giving the opportunity to more who want to join in without any big crowds.

Pom Moongauklang, owner and operator of Pom Pom’s was born and raised in Thailand and after moving to Orlando with family,  made her way to New York earning a degree as a pastry chef. She used her talent and creativity working for such restaurants as NoBu (Robert De Niro’s & Nobuyuki “Nobu” Matsuhisa’s Restaurant) and the famous restaurant, Lucky Changs.

Pom returned to Orlando, and in 2005 started Pom Pom’s Teahouse and Sandwicheria. Over the years, the restaurant has become well known for inventive flavor combinations, friendly staff, art-filled ambiance, and as a second home for so many in the community.

Paddlefish at Disney Springs

On New Year’s Eve (Dec. 31), Paddlefish is bringing back their popular New England Boil for one night only, which combines Maine lobster, chorizo, littleneck clams, red potatoes and sweet corn seasoned with Chef Richard’s secret blend of spices and served with cornbread for $80.

Holiday Happenings at JW Marriott Bonnet Creek Resort including Christmas Dinner at Sear + Sea Woodfire Grill –

Just a few miles away from Disney Springs is Orlando’s newest luxury resort JW Marriott Hotel at the Bonnet Creek Resort, which recently opened this past July 1st, 2020.

You may know Bonnet Creek as home to the nearby Hilton Orlando, Waldorf Astoria and Wyndham Grand, but the new JW Marriott is tucked away back along Chelonia Parkway.

The new hotel is excited about the holiday season and has some exciting events planned for their inaugural year.

On Christmas Eve & Christmas Day from 5pm – 10pm, Sear + Sea will be offering an  evening of good cheer served with grand shareable dishes including: organic truffle chicken, whole local seafood catches and a grilled double-bone tomahawk steak with seasonal flavored accompaniments.

Step away, relax, and enjoy something new and delicious this holiday season, paired with an artful cocktail or selections from their curated wine wall.

Chef de Cuisine Alex Pyser will be preparing shareable dishes with holiday flavors.  He thought back on his Christmas family gatherings and focused specifically on the side dishes like the candied pumpkin & gourds with bourbon glaze, which he always found more interesting than protein preparations.

The flavors and dishes I got to preview at Sear + Sea – from the Oven Roasted Whole Red Snapper to the Candied Pumpkin & Gourds and more – were all quite innovatively prepared, just very fresh and delicious – perfect for that Christmas family meal.

Oven Roasted Whole Red Snapper – rosemary butter based, champagne – meyer lemon sauce, charred lemons, caught locally right here in Florida from Vero Beach – truly a magnificent fish that went exceptionally well with the accompanying holidays sides.

Candied Pumpkin & Gourds – pumpkins, acorn squash, delicata squash, honeynut squash, blistered red onion, tossed in a maple bourbon glaze, finished with spiced pepitas. Delicious!

Roasted Beets  – with sourdough and fresh horseradish.  A taste of fall and harvest with root vegetable theme.

Baby Lettuce Salad – shaved vegetables, rye seed, avocado, ricotta salata, sherry vinaigrette.

Mac & Cheese – “elevated” creamy mac and cheese crafted with rigatoni pasta in lieu of traditional macaroni, with pimento cheese, and topped with crispy chunks of bacon, and a nice spice from jalapeño.

The fantastic food at Sear + Sea puts the experience among the best I have had in Orlando this year, and dinner for Christmas would be icing on any holiday cake.

With all the delicious offerings, do not forget to order one of the holiday cocktails, like the Vodka Tidings.  My dining companion consumed this festive drink and thoroughly enjoyed it.

Another cocktail to check out is the Rosemary Beret, made with Hendrick’s Gin, torched rosemary, raspberry, lemon, aquafaba.

The most impressive menu offering this year will be their massive signature S+S 76 oz. tomahawk!  It is a Double Bone Tomahawk Ribeye prepared with S+S signature rub, woodfire grilled, and smoked onion whole grain mustard.  Feeds 3-4 people.

WHAT: The Promenade at Sunset Walk, Central Florida’s premiere destination for dining and entertainment is welcoming 2021 with a rocking street party and concert starring rock icons, Collective Soul. Coming hot off a triumphant, yearlong celebration of their 25th anniversary in 2019, the band will be performing tracks from their acclaimed 2019 album “Blood” and classic hits like “Shine”, “Gel”, “The World I Know” and “Breathe.” Plus, Rock & Roll Hall of Fame’s Robin Zander – lead vocalist of Cheap Trick performs an unplugged set including Cheap Trick anthems, “I Want You to Want Me”, “Surrender” and “The Flame”.

New Festive Holiday Cocktails at Hawkers Asian Street Food

Hawkers Asian Street Food is known for their wide variety of street food dishes and creative cocktails, and for the holidays this year, they are introducing four new, limited-time holiday cocktails to celebrate.

These drinks are only available until December 31st, so hurry in and try them!

Here are the Four Holiday Cocktails:

1. Santa’s Nightcap

This cocktail is spiced rum, house-made five-spice simple, amaretto, evaporated milk, and coconut served with a plate of gingersnap cookies and a cookie crumb rim.

Santa’s Nightcap has a nice balance of sweet and spice and the cookies go great dipped in the cocktail!

2. Christmas in Singapour

Hendrick’s gin, house-made rosemary simple, cranberry, pomegranate and lime juice all served in a holiday ornament with chilled cranberries and rosemary.

This drink was more on the tart side but still refreshing. The presentation of the cocktail served in an ornament really stood out, and it’s so creative and festive!

3. Get Toasted

Get Toasted is a mixture of coconut rum, house made Vietnamese coffee liqueur, Bailey’s Irish cream, egg white, toasted marshmallows and a Pirouline cookie.

This cocktail was by far my favorite of the night. It was a rich drink but oh so delicious with the Vietnamese coffee liqueur. The toasted marshmallows was a great addition as well!

4. Hotty Toddy Christmas

A more classic cocktail, the Hotty Toddy Christmas is Bulleit rye whiskey, Masala chai black tea, chai-infused sake, house-made five-spice simple, lemon juice, cinnamon sticks, and a lemon wheel served hot. The perfect ending to a meal, especially with the cooler weather.

A Food Lover’s Guide to the SRQ (Sarasota) – Our Perfect Weekend Itinerary for Sunny Sarasota

The Sarasota area is full of history, beauty and some incredible food. It was the official winter home of the Ringling Brothers Circus beginning in 1927, which went on to create a lasting legacy that is still celebrated to this day.

Located on Florida’s Gulf Coast about an hour south of Tampa, Sarasota is one of Florida’s hidden treasures. It consistently ranks among the top ‘small city’ destinations and top Florida cities with healthy food. Lido Key, Siesta Key and St. Armands Key are all located within Sarasota borders, offering spectacular beaches right on the Gulf of Mexico.

Sarasota has a ton to offer its visitors, and thus is the perfect destination for a long weekend getaway. While the city is known for its cultural and recreational activities and attractions including lovely beaches, historic museums, gardens and performing arts, we were excited to experience Sarasota through its delicious food.

Here is Our Perfect Weekend Itinerary for Sunny Sarasota: A Food Lover’s Guide to SRQ

Friday

Sarasota is home to many unique hotels filled with history and art. We chose to stay at The Sarasota Modern, a Tribute Portfolio Hotel for its prime location and stunning amenities. We stayed in the Deluxe Junior Suite, which featured a king bed, sectional sofa, room divider and a walk-in shower. Upon checking in, we were greeted by the complimentary valet service, and welcomed during our check-in with celebratory sangrias.

Rodizio Grill – The Brazilian Steakhouse – Sarasota, Florida

For dinner, we stopped by Rodizio Grill – The Brazilian Steakhouse. Rodizio offers all-you-can-eat Brazilian food (which includes authentic salads, sides and fresh meats) for only $34.99. If you aren’t interested in the meats, $22.99 will get you unlimited salads and sides.

The traditional Brazilian sides include dishes like farofa, pão de queijo (our favorite), macarrão, bananas fritas and much more.

However, the star of the show is without a doubt the array of freshly grilled meats. A variety of beef options were available, as well as some chicken, pork and even abacaxí (fresh glazed and grilled pineapple). The beef cuts were all perfectly seasoned, nice and crispy on the outside while fresh and juicy on the inside. Any meat lover is sure to be impressed. 

Rodizio is a wonderful option for an incredibly filling meal, that is worth the price if you plan to visit on an empty stomach. We recommend either having an early lunch before, or skipping lunch and enjoying an early dinner to fully get the best experience.

Saturday

We kick-started our Saturday with our own personal food tour of St. Armands. St. Armands is a key off the coast of downtown Sarasota, originally founded and designed by John Ringling himself. Key Culinary Tours offers a variety of food tours around the Sarasota area, with both private and group options. The tours are about $75 per person plus tax, which is a fair price considering they include food from three restaurants, two unique shops and even a surprise dessert at the end.

Key Culinary Tours

First up on the tour is Le Colonne, a one-of-a-kind family-owned Italian restaurant located right in the heart of St. Armands Circle. We were served some lovely mimosas upon arrival. Then, we sampled the Bruschetta appetizer and the Ravioli di Ricotta e Spinaci entree. Both were spectacular, and are sure to leave you eager to revisit just to sample even more menu items.

Next, we made our way to the historic Columbia Restaurant. With multiple locations spanning across Central Florida, Columbia’s flagship Ybor City location is actually the oldest restaurant in the entire state of Florida. It opened in 1905, and ownership has remained in the same family for its entire 115-year history. We’ve visited Columbia Restaurant locations in Tampa and St. Augustine previously, so our expectations were already high. Luckily, Sarasota’s Columbia Restaurant did not disappoint. We enjoyed The Original Cuban Sandwich (a classic) and Columbia’s Original ‘1905’ Salad, which is always delicious.

Next up was The Ancient Olive, a gourmet olive oil shop that we were pleasantly surprised by. This hidden gem offers a range of homemade olive oils and balsamic vinegars, as well as ready-to-cook packages of pre-seasoned pastas, soups and more. There are even some decadent wines to choose from, in addition to a ton of kitchen staples throughout the shop.

As part of the food tour, we were taught how to properly taste the olive oils, and given free range to sample pretty much anything in the store. The Ancient Olive isn’t a stop I would typically make while on vacation, but it ended up being one of our favorite spots on the entire trip.

We couldn’t help but walk away with some wine and pastas of our own.

After that, we arrived at Blu Kouzina to taste some authentically delicious Greek food. The restaurant served us sampler plates of all of their most popular menu items, including keftedes (meatballs), kabobs, dolmades (vine leaves) and baklava, with a Greek cider to finish us off. It was the perfect way to taste multiple Blu Kouzina dishes, all of which were exquisite.

Then, we made a stop at The Spice & Tea Exchange, which turned out to be yet another wonderful hidden gem in St. Armands Circle. The walls of this shop were lined with spice blends and an assortment of fine teas, all crafted in-house. You can purchase individual blends, but the shop can also prepare any tea of your choosing either hot and iced.

Being tea lovers, we couldn’t pass. We went with the Blueberry Black Tea and the Mango Tango Herbal Tea. The Mango Tango was the perfect refresher on a warm Sarasota day, almost like a light juice. The Blueberry Black Tea was also tasty, the blueberry adding a subtle sweetness that isn’t at all overbearing.

Overall, The Spice & Tea Exchange is a great find that we highly recommend stopping by, whether you’re a fan of teas, spices or both.

We ended our food tour at Gelato-Go, for some decadent homemade gelato. We ordered the Creme Caramel flavor which comprised of rich caramel-flavored gelato with creamy caramel swirls. Without exaggeration, it was the best gelato we’ve ever had. We highly recommend stopping by Gelato-Go if you’re ever near St. Armands. You won’t regret it.

The food tour lasted a total of three hours.

Once it was complete, we decided to stroll around beautiful St. Armands Circle, taking advantage of the warm, coastal weather.

Speaks Clam Bar – Dinner

Later that evening, we had dinner at Speaks Clam Bar, a St. Armands staple. Speaks has the ambiance of an old-fashioned speakeasy. To our surprise, the date of our visit was actually the anniversary of the end of Prohibition. To celebrate, all Speaks employees were decked out in flapper dresses. The environment was electric.

We ordered the Kiss Kiss Bang Bang (left) which was made of gin, elderflower, agave nectar, lemon and pressed blackberries, and The Speaks Old Fashioned Cocktail (right) made with bourbon, sugar, bitters, orange & lemon essence and candied cherries.

For starters, we ordered 1/2 dozen Raw Oysters and 1/2 dozen Oysters Rockefeller. As expected, both were delectable.

For our entree, we enjoyed the Parmesan Crusted Grouper, which was served with a side of lemon, garlic mashed potatoes and broccolini. We were really impressed by this dish, especially the caper cream sauce garnishing the grouper.

For dessert, you can choose from a variety of parfait-like dessert shots, with flavors such as key lime pie, tiramisu, strawberry shortcake and more. We went with the tiramisu, and were extremely delighted with it. This little dessert shot was both sweet and light, the ideal way to end a dinner without making yourself feel overly full.

Sticking with the 1920’s speakeasy theme, the receipt is presented in a themed antique-like door that opens to a pair of peaking eyes.

Sunday

99 Bottles Taproom & Bottle Shop

While on vacation, Sunday morning brunch is a must. We brunched at 99 Bottles Taproom & Bottle Shop, where we had the opportunity to try some of the most delicious bagels. If you’re looking for an early morning bite but you’re a little crunched for time, 99 Bottles is the perfect spot to try.

We ordered an everything bagel with green onion cream cheese and tomato, as well as a cinnamon raisin bagel topped with cream cheese, smoked salmon, tomato, red onion and cucumber.

The Ringling Musuem

A surprising highlight of our trip was the The Ringling Museum. The grounds are home to a fantastic Museum of Art, an educational Circus Museum, the Ringling Ca’ d’Zan Mansion and many beautiful outdoor spaces.

The John and Mable Ringling Museum of Art surrounds a grand courtyard filled with sculptures and fountains. This outdoor space is breathtakingly peaceful.

John and Mable Ringling were avid collectors of art, and this museum is their legacy. The collection is impressive, including pieces from the Late Medieval thorough the 19th century, as well as Greek, Roman and Cypriot antiquities that Ringling purchased from the Metropolitan Museum of Art.

The Circus Museum tells the origin story of the circus in 19th century America. You can view some authentic circus costumes and equipment, as well as pieces owned by other circus legends such as P.T. Barnum.

The Howard Bros. Circus model is made up of over 44,000 pieces. It provides a glimpse into just how much work went into these circuses that traveled across the country by train.

Entry into to the Ringling Ca’ d’Zan Mansion is not included in the original price of admission, but for an additional $10 per person you can explore John Ringling’s historic estate.

Marina Jack II’s Sunset Dinner Tour

Sunday night, we enjoyed our dinner from a lovely dinner cruise. The beautiful Marina Jack II’s sunset dinner tour takes passengers along the Gulf of Mexico to experience some really special views. It’s priced at $58.95 per person, which includes the boat ride and a three course meal. Marina Jack II also offers a sightseeing daytime lunch cruise for $38.95.

During our dinner cruise, we enjoyed some tasty rolls and garden salads with vinaigrette as starters.

The main course consisted of peppercorn crusted prime rib, grilled salmon with saffron cream sauce, roasted vegetables and cheesy potatoes.

Finally for dessert, we enjoyed key lime pie and raspberry almond cake (there was also an option of double fudge chocolate cake).

Overall, this is a wonderful option if you’re visiting Sarasota for a special occasion, or are looking for the perfect way to spend a romantic evening. The views from the ship are beautiful, and the experience is very intimate.

Marie Selby Botanical Gardens

A must-visit on any trip to Sarasota is the Marie Selby Botanical Gardens. Not only are the grounds beautiful, but they are also filled with some impressive history. Marie Selby was a trailblazer in the fields of horticulture and botany. In an industry largely dominated by men, Selby provided the opportunity for women to work and learn about plants. Today, this legacy remains strong. This is also the world’s only botanical garden dedicated to to the display and study of wonderful tropical plants like bromeliads, epiphytic orchids and gesneriads.

Mote Marine Laboratory and Aquariam

For any animal lovers, we also highly recommend stopping by the Mote Marine Laboratory & Aquarium. This independent, nonprofit marine research institution is focused on conservation and sustainability. Mote uses science to educate the public on issues ranging from the impact humans have on the environment to human cancer studies using marine models. It’s educational, but it’s also a lot fun.

Mote is currently working to rehabilitate a number of sea turtles, with the hopes of returning them back to the wild to live out the rest of their days.

You can also observe other marine animals like sharks, jellyfish, otters and the adorable Axolotl (pictured above).

Mote is a great experience for families, providing educational opportunities for both kids and adults alike.

Orange County May Fine Businesses Up to $5000 a day for Violations, plus Rapid Testing Updates

According to reporting by the Orlando Sentinel, Orange businesses could face fines up to $5,000 a day for ignoring COVID protocols if a new executive order is signed this Friday, December 4th, 2020.

Orange County Mayor Jerry Demings, frustrated by bars and other businesses ignoring protocols to slow the spread of the coronavirus, could slap non-compliant establishments with $500 fines that could increase to $5,000 a day, according to a draft of an executive order he is considering.

If the mayor approves the order on Friday, the fines could begin as early as Sunday for businesses that don’t enforce social distancing, fail to require employees to wear masks or break other rules.

Penalties outlined in the four-page draft include $500 for citations issued by police or code enforcement officers and fines of up to $1,000 a day imposed by a special magistrate for first violations and up to $5,000 a day for repeat offenders. If the magistrate determines the violation to be “irreparable or irreversible in nature” the fine can increase to $15,000, according to the document. Some legal experts expect non-compliant businesses to sue, challenging the mayor’s legal authority. Gov. Ron DeSantis in September prohibited cities and counties from fining individuals for refusing to wear masks or social distance, but the governor’s order did not explicitly prohibit fining businesses.

A county spokeswoman said the mayor would not be available to answer questions about the draft order until Friday afternoon. Read more at the Orlando Sentinel.

Clearing Up Confusion about Types of COVID-19 Testing 

Two kinds of tests are available for COVID-19: viral tests (diagnostic tests) and antibody tests.

  • A viral test tells you if you have a current infection.
  • An antibody test might tell you if you had a past infection.

DIAGNOSTIC TESTS

A diagnostic test can show if you have an active coronavirus infection and should take steps to quarantine or isolate yourself from others. Currently there are two types of diagnostic tests – molecular tests and antigen tests. Both of these tests are currently available for free at Orange County Health Services.

Molecular Tests

Molecular tests, such as RT-PCR tests, detect the virus’s genetic material. PCR tests are considered the most accurate and “gold standard” for diagnosing active coronavirus infection. This test is typically highly accurate and usually does not need to be repeated.

Most PCR tests use a nasopharyngeal swab, which goes deep into your nose to the back of your throat.

Other things to note:

  • Results may take 2-3 days or up to a week (longer in some locations with many tests) to be returned.
  • If you need to travel out of the country or for any other purpose, a molecular test may be required.

Antigen Tests

Antigen tests detect specific proteins from the virus. Most antigen tests use a nasal or nasopharyngeal swab. Results may be returned very quickly (15-30 minutes), depending on the test. Because of this, antigen tests are in high public demand.

Antigen tests are intended for use on symptomatic persons within the first 5-12 days of symptom onset.

Positive results are usually highly accurate, but false positives can happen. Negative results may need to be confirmed with a molecular test. Antigen tests are more likely to miss an active COVID-19 infection compared to molecular tests.

Other things to note:

  • If your antigen test shows a negative result but you have symptoms of COVID-19 and/or have been at-risk for exposure to COVID-19, you should receive a PCR test to ensure accuracy.
  • Prior to an outpatient procedure, hospitals may conduct a rapid test first and confirm that rapid test with a PCR test to ensure accuracy.

ANTIBODY TESTS (AKA Serology Test or Blood Test)

Antibody tests check your blood by looking for antibodies, which can tell you if you had a past infection with the virus that causes COVID-19, regardless of whether you ever showed symptoms. These tests generally produce results in a few minutes based on a drop of blood taken from the finger; some tests may take 1-3 days if blood is drawn for testing. Locally, OneBlood is testing all blood donations for the COVID-19 antibodies.

Antibody tests can provide quick results but should not be used to diagnose someone with an active infection. It can take days to several weeks to develop enough antibodies to be detected in a test.

Whether you test positive or negative for COVID-19 on a viral or an antibody test, you still should take steps to protect yourself and others.

We do not know how much protection (immunity) antibodies to the virus might provide against getting infected again, so you should continue to take steps to protect yourself and others.

First Look: 2nd Mamak Asian Street Food (UCF / East Orlando Area) Now Open for Take Out / Delivery – Plus 7 Must Try Dishes at Mamak

Mamak Asian Street Food, a local family-owned restaurant specializing in Southeast Asian street food, has officially opened its second location, though only for open delivery/take out for the near future. The 80-seat, 3,300 square-foot eatery is located at 3402 Technological Ave near UCF in the University Shoppes next to World of Beer and Lazy Moon, formerly occupied by Pei Wei on University Blvd. Dine – in expected to begin in early 2021.

The second Mamak will mark six years since the opening of the concept’s original location in October of 2014 in the Mills 50 District. The concept’s Southeast Asian street-style fare, coupled with its modern night-market aesthetic, make it a unique addition to the local food scene.

In response to the Covid-19 pandemic, Mamak’s second location will take a fast-casual dining approach with a pared-down menu featuring the concept’s cult favorites. The concept’s takeout and delivery-friendly setup will feature a carryout entrance, and eventually outdoor patio seating.

The new location will also accommodate off-site dining and contactless order fulfillment by offering a mobile text-to-order takeout option along with delivery on all major platforms, including UberEats, Doordash, Postmates and GrubHub.

Its vast menu, punctuated with distinctly Malaysian specialties, includes dishes such as the Roti Canai, a traditional crispy flatbread, the charcoal-grilled Satay chicken or beef skewers, and Char Kway Teow, a signature street-dish made with wok-tossed rice noodles, egg, and bean sprouts. Along with a selection of house-brewed tea, Asian beers, sake and craft cocktails, the menu comes reasonably-priced with all dishes under $14.

Malaysian flat bread, toasted til golden brown, crispy on the outside, fluffy on the inside and served with a side of our signature spicy kari sauce. Spicy and vegetarian.

6 Chicken and shrimp wontons, steamed, drizzled with a roasted peanut brown sauce and hot chili oil, topped with sesame seeds and scallions. Spicy.
