The restaurant is led by Lake Nona Wave Hotel and BACÁN executive chef Guillaume Robin, the Michelin-trained Maîtres Cuisiniers de France awardee (2025).
We spoke with Chef Guillaume Robin about Tempo + Grace and his inspirations:
Tell us about your culinary background and what inspired you to become a chef.
Chef Guillaume Robin: I’ve been a chef for over 22 years, with experience spanning France, England, Ireland, the Caribbean, and luxury cruise ships—always in luxury hotels and Michelin-starred restaurants. Growing up in France, food was an essential part of life. I was fortunate to be surrounded by it from an early age, inspired by both my mother and grandmother, who were exceptional cooks.

What are your most memorable moments during your culinary career?
One of the proudest moments of my career happened this year when I was named Maître Cuisinier de France (Master Chef of France). This incredible honor recognizes not just my skills in French cuisine but also my years of experience and professionalism in the culinary world.

What are your favorite lessons learned that you would like to share with other chefs coming up?
Never give up—failure is just part of the journey. Learn as much as you can, push yourself to grow, and most importantly, have fun while doing it. Passion and joy in the kitchen make all the difference.
What are the most popular dishes right now at Tempo + Grace?
Our standout is the seared salmon with warm farro salad, kale, mint, and green goddess cream. Guests can’t get enough of it!

For those who have never been before, how would you describe Tempo + Grace?
It’s a vibrant, welcoming spot where great food meets great music. From spiced chicken wings and mortadella grilled cheese to our crowd-favorite fried chicken sandwich, the menu is full of bold flavors. We also have fun games for kids, making it a place the whole family can enjoy.
What are some upcoming plans at the restaurant?
We’re excited to launch a new menu soon that will highlight the best of sports bar favorites—perfect for drawing in sports fans to catch a game while enjoying great drinks and food.
