Prato is a Michelin-recognized Italian restaurant owned and operated by the Park Lights
Hospitality group in Winter Park.
They recently re-opened after a multi-week “riposo”, or pause in service while undergoing a series of brand enhancements.
Nearly a year in the making by the Park Lights Hospitality team, Prato paused service for the month of October to complete a refresh including an enhanced bar and dining room,
refreshed branded elements, and back-of-house upfits to support the restaurant’s historically cozy kitchen.
“Over the last 14 years, we’ve been fortunate to serve so many in our community,” said Scott Bowman, President of Park Lights Hospitality Group. “We’re a very busy restaurant, and over the last year we identified key areas to improve to give Prato the firepower it needs for the next 14 years and beyond. We are lovingly referring to this pause as a Riposo – the Italian concept of taking a break before returning refreshed.”
What were the reasons for the “riposo”?
The restaurant has been a staple in the Orlando community for the past 14 years and needed a refresh. Our kitchen needed some breathing room to support our demand and our dining space got some elevated components like a new bar, intentional decor, plus an updated food and beverage menu.
While Prato was closed, the team spent the month engaging in community engagement activities. From outings at the Orlando Magic game to learning about how beer is crafted at Ivanhoe Park Lager House, to enjoying wine education.
Will you still have the Mustard Spaghettini on the menu??
Absolutely. That dish isn’t going anywhere anytime soon, it’s such a classic dish of ours and a guest favorite.

We welcome our guests back to Prato to enjoy an elevated and more sophisticated version of Prato with all the same nostalgia our guests have known for the last 14 years. November 16th is actually our 14 year birthday!
