Hemisphere, the upscale restaurant located on the Hyatt Regency Orlando International Airport’s ninth floor, not only offers eclectic, seasonally sourced, thoughtfully prepared dishes, but also some of the most beautiful and unique views in all of Orlando.

Led by Executive Chef Jeffrey Powell, Hemisphere’s culinary team has unveiled a new menu for the fall – read on to find out more!
New Fall Dishes at Hemisphere:
- Burrata and grilled artichokes with vincotto, dukkha, and lemon preserve.
- Fall Seasonal Salad – Roasted toffee bosh pear, butterscotch vinaigrette, mustard greens, charred radicchio, spiced pecan and a blue cheese mousseline
- Shrimp, tostones (fried plantain), miso avocado sauce and mango jicama pico salad – shrimp poached in a balance court bouillon and apple cider vinegar, brunoised vegetables
- Cheese plate with petite Camembert, roasted grapes, balsamic reduction, honey, pistachios and mezzo doppio crostini.
- Plated petite filet with asparagus, fondant potatoes, ISI béarnaise and mushroom chips
- Lobster risotto started as a special and now is a regular menu item, dusted with fennel pollen comes with a grilled lemon and a charcoal tuille.
- Lamb chops are back with the charcoal yucca, hen of the wood mushroom and blackberry gastric.
- Pappardelle short rib pasta, root vegetables includes turnip, celeriac, sweet potatoes rutabaga tossed in a sauce Robert (“Taillevent”) which is a 16th century sauce brought to the books by Escoffier. Contains egg, dairy and gluten.
