This recipe is provided by my father-in-law, To Wong, a 40 year veteran of the Chinese restaurant industry, recently retired. It’s a wonderful recipe and I think the key is to make sure you marinate for at least a day to let the flavors soak into the pork.
RECIPE – Chinese Honey BBQ Pork Ribs aka Cha Siu Pork Ribs
Ingredients
2 lb pork shoulder cut in 1.5 inch slabs or two lbs pork ribs
0.75 spoons* salt
3 cloves garlic finely chopped
5 spoons sugar
Pinch of Chinese five spice
1.5 spoons of Hoisin sauce
0.5 spoon of Ketchup
Three Drops Red Food color
0.5 spoon Chee Hou sauce (fermented soybean sauce similar to hoisin) (if available – optional)
Two spoons of Hsiaohsing or rice wine
*Spoons are Chinese soup spoons or tablespoon
Instructions
Mix together ingredients in a mixing bowl
Add pork into the bowl
Marinate for 1.5 days in a large gallon ziplock bag
Flip meat over after one day
Turn on oven – Broil Low on high rack for 25 min
Flip meat over and low broil another 25 min
Keep an eye on the meat to make sure it doesn’t burn
Take BBQ pork out and brush honey on.
