From Distant Shores to Orlando’s Audubon Park: Chef Bruno Fonseca’s Culinary Odyssey at Foreigner Restaurant

0

Chef Bruno Fonseca, a Brazilian native who has called Orlando home for nearly three decades, is redefining the city’s culinary landscape. Born in Rio de Janeiro and raised in a vibrant, multicultural household with Brazilian, Portuguese, Spanish, and Italian roots, Fonseca’s love for cooking was inspired early on by his family’s nightly dinners and formative experiences in fine dining.

Chef Fonseca honed his craft in renowned kitchens including Norman’s and Bern’s Steak House, later returning to Le Cordon Bleu as an instructor. However, it was his bold, personal concept—The Foreigner Experience—that truly set him apart. This pop-up dinner series embraced a “menu-confiance” philosophy, meaning guests placed their trust entirely in the chef’s vision, enjoying meticulously crafted tasting menus without a fixed script.

OLYMPUS DIGITAL CAMERA

The experience’s success inspired Fonseca to open Foreigner Restaurant in Audubon Park in 2023, a permanent home for his innovative, multi-course, chef’s-table format. The restaurant showcases “American food through the eyes of a foreigner,” highlighting seasonal produce, local seafood, and artistic plating, all served in an intimate, open-kitchen space where guests can watch the culinary story unfold.

Signature touches include rotating dishes such as oysters with caviar, black-sourdough bread with umami-packed black butter, hay-smoked duck, and lamb two way—each beautifully paired with wines selected by Brett Ware, their in?house sommelier from French Champagne to Portuguese Madeira—creating a globally inspired culinary journey.

Alongside Foreigner, Fonseca launched Bruno’s Oysters, a casual oyster bar nestled in Winter Garden’s Plant Street Market. The contrast is intentional: no reservations, no pretense—just simple, high-quality seafood and a relaxed atmosphere that echoes his deep respect for fresh ingredients and genuine connections. We interviewed Chef Fonseca about his background and Foreigner Restaurant via e-mail – read on!

OLYMPUS DIGITAL CAMERA

Tell us about your background and experience highlights.

I am originally from Rio de Janeiro, Brazil, but I am proud to say that my family and I have been  residents in the central Florida area for a very long time.  Through much hard work, luck and discipline I have been cooking for over 20 years under/with/for some incredible individuals.  People like Norman Van Aken, Clay Miller, Master Chef Jack Shoope, Master Chef Klaus Friederich, to name a few.

Tell us what inspired you to become a chef?

The process of nourish, taking care of others,  and the development of foods as a component onto something entirely different as a final product, coupled with a mission and creativity.  Also at an early age, my family and I would go to restaurants often as celebratory and honestly experimental moments.

For those who have never been before, how would you describe the Foreigner Experience to them. Tell us about the name.

The inspiration to do this is to offer a better product to the public on a multi course format, and tell the story of food through a foreigner’s perspective on food, let it be the food that I grew up eating in my house (multicultural house-Brazilian food, Portuguese, Italian etc…), the food that I encountered when I moved to the US, and the food that I grew up cooking in the different kitchens here in the US.  It is not fusion as different dishes have one underlying direction.

Hosted directly in front of their woodfire grill, this immersive dining experience begins before the restaurant opens, offering a rare behind-the-scenes look at their culinary craft.

The menu by Chef Jobin Thomas is inspired by Southern , Japanese, Indian, and French techniques, with standouts like braised gator okonomiyaki, torched A5 Wagyu, and Alaskan King Crab in koji butter, each expertly paired with world class wines.

From playful starters like the yogurt chatt amuse to elegant finishes like deconstructed strawberry cheesecake, this menu was truly one of the best chef’s tastings I have ever had in Orlando.

Chef Thomas recently came to Orlando from TOCA, the acclaimed restaurant within The Ritz-Carlton, Toronto where he worked closely with consulting Michelin-star Chef Oliver Glowig and Executive Chef Paul Shewchuk while moving his way up to the position of Restaurant Chef.

Orlando’s Underrated Rated – Missing from the Michelin Guide – So Far…

Orlando’s culinary scene continues to evolve beyond theme park fare, showcasing bold flavors, deep cultural roots, and serious kitchen talent. But even with the Michelin Guide’s growing presence in Florida, some standout local gems still haven’t received their flowers — no Star, Bib Gourmand, or even a Recommendation. Here’s a look at some of the city’s most talked-about dining experiences that remain noticeably absent from the Michelin map.

1. Bull and Bear

Address: 14200 Bonnet Creek Resort Ln, Orlando, FL 32821
Phone: 407-597-5500

Elegant, polished, and theatrically indulgent, Bull & Bear is where classic steakhouse luxury meets tableside showmanship. From its prime tomahawk cuts to its refined service, this is the kind of experience Michelin usually eats up. The fact that it hasn’t earned a star feels like a curious oversight.

2. The Foreigner

Address: 2816 Corrine Dr, Orlando, FL 32803
Phone: 321-517-6985

A true underground gem, The Foreigner’s intimate chef’s tasting dinners are immersive, ingredient-driven, and personal. Chef Bruno Fonseca crafts each experience with storytelling, technique, and bold global flavors. It’s the kind of culinary intimacy that’s often Michelin bait.

3. The Moderne

Address: 1241 E Colonial Dr Orlando, FL 32803

Sleek but soulful, The Moderne blends contemporary Asian cuisine with striking presentation and serious balance. The precision here — from sushi to hot dishes — suggests a kitchen operating at a high level. Michelin’s silence on this one is starting to raise eyebrows.

4. Seito Baldwin Park

Address: 4898 New Broad St #32814, Orlando, FL 32814
Phone: (407) 898-8801

This longtime favorite continues to redefine neighborhood sushi with seasonal specials and flawless execution. Seito balances playful creativity with deep respect for Japanese technique. If Michelin gave points for consistency and community love, they’d already be in.

5. The Osprey

Address: 4899 New Broad Street, Orlando, FL 32814
Phone: (407) 960-7700

The Osprey brings modern coastal energy to Baldwin Park, with a seafood-forward menu and one of the sharpest raw bars in the city. It’s elevated but never fussy — just clean flavors, perfect textures, and a laid-back vibe Michelin often overlooks in favor of formality.

6. The Monroe

Address: 448 N Terry Ave., Orlando, FL 32801
Phone: (407) 734 2102

Chef Josh Oakley’s menu is a love letter to comfort food, Southern roots, and neighborhood hospitality. The Monroe doesn’t aim for fine dining; it aims for soul, and it hits that mark every time. It’s a bold omission from a guide that says it celebrates character.

7. Reyes Mezcaleria

Address: 821 N Orange Ave, Orlando, FL 32804
Phone: (407) 868-9007

Reyes delivers vibrant, modern Mexican cuisine in a lively space that’s always buzzing. The flavors are layered, thoughtful, and rooted in heritage — and the bar program deserves its own accolades. Michelin’s absence here suggests they might need a better mezcal education.

8. Adega Gaucha

Address: 8204 Crystal Clear Ln, Orlando, FL 32809
Phone: (407) 250 44 55

Forget everything you know about Brazilian steakhouses. Adega Gaucha takes the churrasco experience to a refined, chef-led level. It’s white tablecloth elegance with fire-kissed flavor and obsessive technique. A nod from Michelin feels overdue.

9. Hinckley’s Fancy Meats

Address: 3201 Corrine Drive, Ste 4, Orlando, Florida 32803

Hidden in East End Market, Hinckley’s is doing nose-to-tail butchery with uncompromising detail. Their sandwiches are legendary, but it’s the craftsmanship—the curing, aging, and spicing—that makes this a chef’s favorite. It’s meat-forward artistry Michelin shouldn’t miss.

10. Sampaguita Ice Cream

Address: 1233 East Colonial Dr., Orlando, FL 32803

A dessert shop with the soul of a fine-dining restaurant, Sampaguita celebrates Filipino flavors through stunning soft serves and pastries. The creativity and cultural storytelling here rival any tasting menu. It proves Michelin-worthy experiences don’t have to come with a white tablecloth.

11. Turci Pasta

Address: 2120 Edgewater Dr., Orlando, FL 32804
Phone: (407) 487-2015

Turci is handmade pasta, done daily, done properly, and always paired with heartfelt service. It’s the kind of neighborhood spot where a single bite of cacio e pepe reminds you why simplicity matters. If the Michelin Guide values authenticity, this one’s an easy choice.

Address: 7048 International Dr., Orlando, FL 32819

Orlando’s best-kept secret for communal, spice-rich meals, Nile offers an immersive cultural dining experience. Injera, lentils, and slow-braised meats served by hand on shared platters—it’s food that connects. Michelin would do well to recognize this cornerstone of East African cuisine.

15. Koko Kakigori

Address: 620 N Thornton Ave., Orlando, FL 32803

This Japanese dessert café specializes in kakigori, hand-shaved ice mounded with intricate toppings like miso caramel or matcha cream. But it’s more than just sweets; it’s art. Koko’s mastery of texture and flavor shows that even dessert can be deserving of recognition.

While Michelin’s choices often stir debate, one thing is certain: Orlando’s culinary identity is richer and more diverse than ever. Recognition or not, these restaurants have earned loyal followings by doing what Michelin should reward: cooking with heart, precision, and purpose. Maybe next year the stars will align.

A Recipe for Success: From Düsseldorf to Epic Universe with Universal Orlando Resort’s Chef Jens Dahlmann

Join us for an exclusive conversation with Chef Jens Dahlmann, one of the culinary visionaries behind Universal Orlando Resort’s innovative dining experiences. With a remarkable career spanning Düsseldorf’s kitchens, ultra-luxury cruise lines, New York’s iconic Le Cirque, and now the immersive worlds of Universal’s theme parks, Chef Dahlmann brings a global perspective and passion for storytelling through food.

In this interview, he shares his journey, the transformation of Universal’s food and beverage scene, and a sneak peek at the “epic” culinary offerings awaiting guests at the highly anticipated Universal Epic Universe, now open this May 2025.

Tell us about your culinary background and journey to Orlando

  • My Grandpa was a Master Pastry Chef, and my dad was a trained Chef as well. I grew up in a commercial kitchen environment, cooking has been part of my life from the very beginning.

I formally began my career in Düsseldorf, Germany, where I completed a three-year apprenticeship under a Master Chef, learning the ins and outs of the craft. After graduating, my journey to grow and learn continued across fantastic hotels and restaurants throughout Germany and Switzerland, as well as aboard ultra-luxury cruise lines traveling through Southeast Asia (Myanmar, Thailand, Indonesia, Malaysia, Vietnam, and Hong Kong) and the Mediterranean Sea. Working on cruise ships was tough but incredibly rewarding — it was there I fell in love with Asian cuisine and also met the owners and chef from the famous NYC restaurant Le Cirque 2000, who recruited me to join their team as Sous Chef.

I arrived in New York City in the late 1990s, and my time at Le Cirque became a pivotal moment in my career. Working at one of the world’s most recognized restaurants refined my skills, knowledge, and leadership. During my 4 years at Le Cirque, I met my wife Gina in the kitchen, and we decided it was time to start a family and move south. We spent three wonderful years in Palm Beach, where I ran a fine dining restaurant. From there, I moved to Orlando and spent 12 years working for a large entertainment and theme park company, serving as Executive Chef and General Manager of Food and Beverage.

Before joining Universal Orlando Resort, I spent seven years as Vice President of Culinary for one of the largest casual dining brands headquartered in Orlando, overseeing R&D and strategic menu planning for their two largest concepts.

When the opportunity came to join Universal Orlando Resort — stepping into the footsteps of Steve Jayson, who retired after 35 years — it was simply too good to pass up. The creativity that comes with working in a theme park environment, combined with iconic rides and IPs, opens endless opportunities for storytelling through food. Of course, what truly sold me was the chance to help open Universal Epic Universe. Being part of the development and storytelling through food — bringing these amazing restaurants and stories to life — is a once-in-a-lifetime opportunity. Creating unique and delicious dishes alongside our incredibly talented chef team is something I’m deeply proud to be part of.

How have the food and beverage scene at Universal transformed over the past few years?

  • A few years ago, Universal Orlando’s Food and Beverage team really pivoted. We doubled down on immersive storytelling through food, embracing creativity and technology to transform the guest experience. Whether it’s our marquee events like Halloween Horror Nights and Mardi Gras or exciting new restaurants like Illumination’s Minion Cafe, we’re focused more than ever on delivering quality, storytelling, flavor, and creating environments that truly transport guests into our worlds — and exceed their expectations.

What are you most looking forward to this 2025?

  • At the top of the list: the grand opening of Universal Epic Universe on May 22! Our team has worked incredibly hard, and I’m so proud of everything we’ve accomplished and how beautifully it’s all coming together. Vacation time would be a close second! ?

What are some things you draw inspiration on in your work?

  • I’ve been fortunate to travel and work in many different places throughout my career, and I like to say I’ve collected “puzzle pieces” along the way. I love pulling from these experiences to authentically tell stories of culture and food.

I’m also constantly inspired by the local food scene here in Orlando. The Mills 50 district is always evolving. From the Crispy Rice Salad at Sticky Rice to the Roti at Mamak and the amazing Chinese BBQ at the Mills market, there’s always something new to discover. Love exploring. And of course, social media is a big source of inspiration too — it lets you travel the world without ever having to get on a plane! ?

What are some of the biggest lessons you have learned over the years in the industry that you would like to share to those coming up in the field?

  • I truly love Food, Beverage, and Hospitality — even after more than 35 years, it still doesn’t feel like “work” to me. I’ve been lucky enough to dedicate myself to something I’m passionate about and good at.

My advice: Say yes to opportunities and take risks, especially when you’re young and have less to lose — it will pay off over time. Treat your career like a portfolio of investments: work for good companies, dedicate yourself, and think long-term. The compound interest on your experience and relationships will create real success in the future.

What are some of your proudest achievements so far?

  • When I look back, I’m proud of how far I’ve come — and honestly, none of it was meticulously planned. Opportunities came, and I said yes. I’ve had the privilege of working for incredible people and companies throughout my career. But without question, my greatest achievement is my family. My wife Gina, a trained chef herself, made the decision to step back and focus on raising our three amazing kids: Sofia (22), Jonas (19), and Nina (16). Her dedication gave me the space to pursue a career I love, and together we’ve built a beautiful life here in Orlando. I’m deeply grateful for that.

With the opening of the new Epic Universe theme park, what can guests expect in terms of food and beverage at the new park? What are some must try’s while there?

The Kitchen House: A New Chapter for Edible Education Experience in Central Florida

0

Orlando’s Edible Education Experience has rebranded as The Kitchen House, marking a new step forward in its mission to connect the Central Florida community with food and each other.

Operating from the Emeril Lagasse Foundation Kitchen House and Culinary Garden in College Park, the nonprofit’s new name pays homage to its home while reflecting its commitment to immersive garden-to-kitchen experiences.

With new co-executive directors Sara Elliott and Betsy Gwinn at the helm, The Kitchen House is poised to expand its reach and deepen its impact.

The rebrand signals a renewed focus on hands-on programming that teaches people of all ages to grow, cook, and enjoy whole, plant-based foods.

“Our name reflects what we do—inviting people into a warm, welcoming space where they can grow, cook, and enjoy real food together,” says Gwinn, whose deep ties to Central Florida’s nonprofit scene bring energy to the organization.

Elliott, drawing on her experience at the Stone Barns Center for Food and Agriculture, adds, “Knowing how to prepare fresh, whole food isn’t just a skill—it’s essential for our health and the environment.”

Founded over a decade ago by Chef Kevin Fonzo, gardener Brad Jones, educator Sarah Cahill, and Orlando Junior Academy, The Kitchen House grew from a simple question: What if students could learn about science, health, and the environment through real food?

That vision continues to shape its youth and community programs, which emphasize harvesting fresh produce from the organization’s robust garden and sharing meals together. “Our experiences show people how to confidently grow, cook, and enjoy whole foods,” says Program Manager Chef Megan Amnott. “The best part is enjoying the meals together.”

The need for such programs is urgent, as 70% of U.S. children and teens’ diets consist of ultra-processed foods linked to obesity, diabetes, and other chronic illnesses.

The Kitchen House counters this trend by equipping the community with the knowledge and skills to choose grown, not manufactured, foods—fostering healthier bodies, stronger communities, and a more sustainable planet.

Under Elliott and Gwinn’s leadership, The Kitchen House is expanding its classes, interactive programs, and shared meals to reach more Central Floridians. To learn more or get involved, visit TheKitchenHouse.org.

About The Kitchen House
The Kitchen House is a nonprofit organization based in Orlando’s College Park, dedicated to creating deeper connections with food and community through immersive garden-to-table experiences for Central Florida.
