New in Orlando! Michelin Guide recommended Sear + Sea’s debuts new exclusive seven-course Chef’s Fireside Tasting and Wine Pairing at Sear + Sea Woodfire Grill – an intimate, chef-guided journey through the flavors of fire and finesse.
Hosted directly in front of their woodfire grill, this immersive dining experience begins before the restaurant opens, offering a rare behind-the-scenes look at their culinary craft.
The menu by Chef Jobin Thomas is inspired by Southern , Japanese, Indian, and French techniques, with standouts like braised gator okonomiyaki, torched A5 Wagyu, and Alaskan King Crab in koji butter, each expertly paired with world class wines.
From playful starters like the yogurt chatt amuse to elegant finishes like deconstructed strawberry cheesecake, this menu was truly one of the best chef’s tastings I have ever had in Orlando.
Chef Thomas recently came to Orlando from TOCA, the acclaimed restaurant within The Ritz-Carlton, Toronto where he worked closely with consulting Michelin-star Chef Oliver Glowig and Executive Chef Paul Shewchuk while moving his way up to the position of Restaurant Chef.
New Chef’s Fireside Tasting In Sear + Sea at JW Marriott Orlando Bonnet Creek
$250++ per person | Includes tasting menu and wine pairing.
Please note: This is a communal dining experience with a maximum of six guests. Parties of fewer than six will be seated with other guests, creating a shared, elegant setting that encourages connections and conversation.
Orlando’s culinary scene continues to evolve beyond theme park fare, showcasing bold flavors, deep cultural roots, and serious kitchen talent. But even with the Michelin Guide’s growing presence in Florida, some standout local gems still haven’t received their flowers — no Star, Bib Gourmand, or even a Recommendation. Here’s a look at some of the city’s most talked-about dining experiences that remain noticeably absent from the Michelin map.
Elegant, polished, and theatrically indulgent, Bull & Bear is where classic steakhouse luxury meets tableside showmanship. From its prime tomahawk cuts to its refined service, this is the kind of experience Michelin usually eats up. The fact that it hasn’t earned a star feels like a curious oversight.
A true underground gem, The Foreigner’s intimate chef’s tasting dinners are immersive, ingredient-driven, and personal. Chef Bruno Fonseca crafts each experience with storytelling, technique, and bold global flavors. It’s the kind of culinary intimacy that’s often Michelin bait.
Sleek but soulful, The Moderne blends contemporary Asian cuisine with striking presentation and serious balance. The precision here — from sushi to hot dishes — suggests a kitchen operating at a high level. Michelin’s silence on this one is starting to raise eyebrows.
Address: 4898 New Broad St #32814, Orlando, FL 32814 Phone: (407) 898-8801
This longtime favorite continues to redefine neighborhood sushi with seasonal specials and flawless execution. Seito balances playful creativity with deep respect for Japanese technique. If Michelin gave points for consistency and community love, they’d already be in.
The Osprey brings modern coastal energy to Baldwin Park, with a seafood-forward menu and one of the sharpest raw bars in the city. It’s elevated but never fussy — just clean flavors, perfect textures, and a laid-back vibe Michelin often overlooks in favor of formality.
Address: 448 N Terry Ave., Orlando, FL 32801 Phone: (407) 734 2102
Chef Josh Oakley’s menu is a love letter to comfort food, Southern roots, and neighborhood hospitality. The Monroe doesn’t aim for fine dining; it aims for soul, and it hits that mark every time. It’s a bold omission from a guide that says it celebrates character.
Reyes delivers vibrant, modern Mexican cuisine in a lively space that’s always buzzing. The flavors are layered, thoughtful, and rooted in heritage — and the bar program deserves its own accolades. Michelin’s absence here suggests they might need a better mezcal education.
Forget everything you know about Brazilian steakhouses. Adega Gaucha takes the churrasco experience to a refined, chef-led level. It’s white tablecloth elegance with fire-kissed flavor and obsessive technique. A nod from Michelin feels overdue.
Hidden in East End Market, Hinckley’s is doing nose-to-tail butchery with uncompromising detail. Their sandwiches are legendary, but it’s the craftsmanship—the curing, aging, and spicing—that makes this a chef’s favorite. It’s meat-forward artistry Michelin shouldn’t miss.
Address: 1233 East Colonial Dr., Orlando, FL 32803
A dessert shop with the soul of a fine-dining restaurant, Sampaguita celebrates Filipino flavors through stunning soft serves and pastries. The creativity and cultural storytelling here rival any tasting menu. It proves Michelin-worthy experiences don’t have to come with a white tablecloth.
Turci is handmade pasta, done daily, done properly, and always paired with heartfelt service. It’s the kind of neighborhood spot where a single bite of cacio e pepe reminds you why simplicity matters. If the Michelin Guide values authenticity, this one’s an easy choice.
Address: 2103 W Fairbanks Avenue Winter Park, FL 32789 Phone: (321) 444-6270
These Mexico City-style street tacos are bursting with fire-roasted flavor and heritage-driven craft. What started as a humble walk-up has become a beloved institution. Michelin needs to get in line; the locals already know it’s five-star flavor in a paper tray.
Quietly iconic, Chatham’s has been delivering white-glove service and elevated cuisine for decades. It’s old-school in the best way: elegant, intimate, and deeply personal. In an era of trends, it’s the kind of timelessness that Michelin usually rewards.
Address: 7048 International Dr., Orlando, FL 32819 Phone: 407.354.0026
Orlando’s best-kept secret for communal, spice-rich meals, Nile offers an immersive cultural dining experience. Injera, lentils, and slow-braised meats served by hand on shared platters—it’s food that connects. Michelin would do well to recognize this cornerstone of East African cuisine.
This Japanese dessert café specializes in kakigori, hand-shaved ice mounded with intricate toppings like miso caramel or matcha cream. But it’s more than just sweets; it’s art. Koko’s mastery of texture and flavor shows that even dessert can be deserving of recognition.
While Michelin’s choices often stir debate, one thing is certain: Orlando’s culinary identity is richer and more diverse than ever. Recognition or not, these restaurants have earned loyal followings by doing what Michelin should reward: cooking with heart, precision, and purpose. Maybe next year the stars will align.

Located inside the Hyatt Regency, B-Line Diner offers a polished take on the classic diner. Known for its late hours, it’s a go-to for travelers and locals downtown. The menu includes breakfast, burgers, and desserts like their signature cheesecake.
Address: 10169 University Boulevard, Orlando, Florida 32817 Phone: (407) 677-6776
Johnny’s Diner is a no-frills, all-heart spot serving hearty portions of diner classics. Locals love the omelets, biscuits and gravy, and friendly staff. It’s simple, affordable, and reliable.
A modern spin on the classic, At The Diner impresses with its creative dishes like cinnamon roll pancakes and Cuban Benedict. The place is clean, sleek, and popular with the brunch crowd. Expect a wait on weekends—it’s worth it.
Address: 617 N Primrose Drive, Orlando, FL, 32803 Phone: 407.203.0727
Se7en Bites is a standout in the Milk District with over-the-top comfort food and craveable desserts. Their huge biscuits, “Seven Deadly Sins” cake, and Southern flair keep lines out the door. It’s a brunch hotspot you won’t forget.
A cozy neighborhood diner in College Park, Shakers is known for great breakfast and walls lined with vintage salt and pepper shakers. Their spinach omelet and cinnamon roll French toast are crowd favorites. It’s small, sweet, and super local.
Address: 3335 Curry Ford Rd, Orlando, FL 32806 Phone: 407-898-8338
East Orlando’s Daybreak Diner is all about fast, filling, and affordable meals. You’ll find regulars coming in for grits, pancakes, and bottomless coffee. The service is quick, and the vibe is always welcoming.
Address: 5350 International Dr, Orlando, FL 32819 Phone: 407-370-4646
Hash House A Go Go delivers jaw-dropping portions and outrageous presentations. Think chicken and waffles stacked high with a knife through the middle. It’s a spectacle and a meal rolled into one. Ideal for brunch with friends or out-of-town guests.
Address: 7125 S Orange Ave, Orlando, FL 32809 Phone: 407-812-7012

Address: 139 N Central Ave, Oviedo, FL 32765 Phone: 407-365-5151

Join us for an exclusive conversation with Chef Jens Dahlmann, one of the culinary visionaries behind Universal Orlando Resort’s innovative dining experiences. With a remarkable career spanning Düsseldorf’s kitchens, ultra-luxury cruise lines, New York’s iconic Le Cirque, and now the immersive worlds of Universal’s theme parks, Chef Dahlmann brings a global perspective and passion for storytelling through food.
In this interview, he shares his journey, the transformation of Universal’s food and beverage scene, and a sneak peek at the “epic” culinary offerings awaiting guests at the highly anticipated Universal Epic Universe, now open this May 2025.
Tell us about your culinary background and journey to Orlando
My Grandpa was a Master Pastry Chef, and my dad was a trained Chef as well. I grew up in a commercial kitchen environment, cooking has been part of my life from the very beginning.
I formally began my career in Düsseldorf, Germany, where I completed a three-year apprenticeship under a Master Chef, learning the ins and outs of the craft. After graduating, my journey to grow and learn continued across fantastic hotels and restaurants throughout Germany and Switzerland, as well as aboard ultra-luxury cruise lines traveling through Southeast Asia (Myanmar, Thailand, Indonesia, Malaysia, Vietnam, and Hong Kong) and the Mediterranean Sea. Working on cruise ships was tough but incredibly rewarding — it was there I fell in love with Asian cuisine and also met the owners and chef from the famous NYC restaurant Le Cirque 2000, who recruited me to join their team as Sous Chef.
I arrived in New York City in the late 1990s, and my time at Le Cirque became a pivotal moment in my career. Working at one of the world’s most recognized restaurants refined my skills, knowledge, and leadership. During my 4 years at Le Cirque, I met my wife Gina in the kitchen, and we decided it was time to start a family and move south. We spent three wonderful years in Palm Beach, where I ran a fine dining restaurant. From there, I moved to Orlando and spent 12 years working for a large entertainment and theme park company, serving as Executive Chef and General Manager of Food and Beverage.
Before joining Universal Orlando Resort, I spent seven years as Vice President of Culinary for one of the largest casual dining brands headquartered in Orlando, overseeing R&D and strategic menu planning for their two largest concepts.
When the opportunity came to join Universal Orlando Resort — stepping into the footsteps of Steve Jayson, who retired after 35 years — it was simply too good to pass up. The creativity that comes with working in a theme park environment, combined with iconic rides and IPs, opens endless opportunities for storytelling through food. Of course, what truly sold me was the chance to help open Universal Epic Universe. Being part of the development and storytelling through food — bringing these amazing restaurants and stories to life — is a once-in-a-lifetime opportunity. Creating unique and delicious dishes alongside our incredibly talented chef team is something I’m deeply proud to be part of.
How have the food and beverage scene at Universal transformed over the past few years?
A few years ago, Universal Orlando’s Food and Beverage team really pivoted. We doubled down on immersive storytelling through food, embracing creativity and technology to transform the guest experience. Whether it’s our marquee events like Halloween Horror Nights and Mardi Gras or exciting new restaurants like Illumination’s Minion Cafe, we’re focused more than ever on delivering quality, storytelling, flavor, and creating environments that truly transport guests into our worlds — and exceed their expectations.
What are you most looking forward to this 2025?
At the top of the list: the grand opening of Universal Epic Universe on May 22! Our team has worked incredibly hard, and I’m so proud of everything we’ve accomplished and how beautifully it’s all coming together. Vacation time would be a close second! ?
What are some things you draw inspiration on in your work?
I’ve been fortunate to travel and work in many different places throughout my career, and I like to say I’ve collected “puzzle pieces” along the way. I love pulling from these experiences to authentically tell stories of culture and food.
I’m also constantly inspired by the local food scene here in Orlando. The Mills 50 district is always evolving. From the Crispy Rice Salad at Sticky Rice to the Roti at Mamak and the amazing Chinese BBQ at the Mills market, there’s always something new to discover. Love exploring. And of course, social media is a big source of inspiration too — it lets you travel the world without ever having to get on a plane! ?
What are some of the biggest lessons you have learned over the years in the industry that you would like to share to those coming up in the field?
I truly love Food, Beverage, and Hospitality — even after more than 35 years, it still doesn’t feel like “work” to me. I’ve been lucky enough to dedicate myself to something I’m passionate about and good at.
My advice: Say yes to opportunities and take risks, especially when you’re young and have less to lose — it will pay off over time. Treat your career like a portfolio of investments: work for good companies, dedicate yourself, and think long-term. The compound interest on your experience and relationships will create real success in the future.
What are some of your proudest achievements so far?
When I look back, I’m proud of how far I’ve come — and honestly, none of it was meticulously planned. Opportunities came, and I said yes. I’ve had the privilege of working for incredible people and companies throughout my career. But without question, my greatest achievement is my family. My wife Gina, a trained chef herself, made the decision to step back and focus on raising our three amazing kids: Sofia (22), Jonas (19), and Nina (16). Her dedication gave me the space to pursue a career I love, and together we’ve built a beautiful life here in Orlando. I’m deeply grateful for that.

Orlando’s Edible Education Experience has rebranded as The Kitchen House, marking a new step forward in its mission to connect the Central Florida community with food and each other.
Operating from the Emeril Lagasse Foundation Kitchen House and Culinary Garden in College Park, the nonprofit’s new name pays homage to its home while reflecting its commitment to immersive garden-to-kitchen experiences.
With new co-executive directors Sara Elliott and Betsy Gwinn at the helm, The Kitchen House is poised to expand its reach and deepen its impact.
The rebrand signals a renewed focus on hands-on programming that teaches people of all ages to grow, cook, and enjoy whole, plant-based foods.
“Our name reflects what we do—inviting people into a warm, welcoming space where they can grow, cook, and enjoy real food together,” says Gwinn, whose deep ties to Central Florida’s nonprofit scene bring energy to the organization.
Elliott, drawing on her experience at the Stone Barns Center for Food and Agriculture, adds, “Knowing how to prepare fresh, whole food isn’t just a skill—it’s essential for our health and the environment.”
Founded over a decade ago by Chef Kevin Fonzo, gardener Brad Jones, educator Sarah Cahill, and Orlando Junior Academy, The Kitchen House grew from a simple question: What if students could learn about science, health, and the environment through real food?
That vision continues to shape its youth and community programs, which emphasize harvesting fresh produce from the organization’s robust garden and sharing meals together. “Our experiences show people how to confidently grow, cook, and enjoy whole foods,” says Program Manager Chef Megan Amnott. “The best part is enjoying the meals together.”
The need for such programs is urgent, as 70% of U.S. children and teens’ diets consist of ultra-processed foods linked to obesity, diabetes, and other chronic illnesses.
The Kitchen House counters this trend by equipping the community with the knowledge and skills to choose grown, not manufactured, foods—fostering healthier bodies, stronger communities, and a more sustainable planet.
Under Elliott and Gwinn’s leadership, The Kitchen House is expanding its classes, interactive programs, and shared meals to reach more Central Floridians. To learn more or get involved, visit TheKitchenHouse.org.
About The Kitchen House The Kitchen House is a nonprofit organization based in Orlando’s College Park, dedicated to creating deeper connections with food and community through immersive garden-to-table experiences for Central Florida.

In this interview, we sit down with Massimo Fallica, an experienced Italian restaurateur who has spent over 20 years perfecting the art of authentic Italian cuisine in the UK and now brings his expertise to Winter Park at Grappolo Cucina Italiana. With a passion for blending time-honored recipes with exceptional service, he shares his journey of transforming London/Surrey’s La Meridiana into an award-winning establishment and also introduces Grappolo, the new family-oriented restaurant now open in Winter Park offering diners a unique taste of Italy.

My approach centres on efficient operations, team motivation, budget control, and exceptional guest satisfaction—essential pillars in creating memorable dining experiences. Over the years, I’ve opened and managed several acclaimed Italian restaurants in London, including La Figa and Babylon, overseeing everything from staff recruitment and training to menu design.
My dedication to excellence has earned me four different awards in the United Kingdom, underscoring my passion for authentic Italian cuisine and service. Since taking ownership of La Meridiana in late 2017, I have worked tirelessly to transform it into an award-winning establishment renowned for its welcoming atmosphere and time-honoured recipes.
By carefully managing costs, elevating service quality, and consistently meeting the needs of a loyal, discerning clientele, I continue to bring the flavours and traditions of Italy to life.
Why Winter Park? Winter Park boasts a vibrant dining scene that thrives on its lively cultural heritage and affluent, well-educated community.

Inspired by the cultural significance of Arabic coffee, Shams Khazil founded Barakah Beans to create a warm, welcoming space where each cup fosters connection and joy, embodying the Arabic concept of “barakah” or blessing.
From signature drinks like the pistachio latte and Adeni chai to overcoming the challenges of running a women-led mobile coffee cart, Shams is dedicated to blending tradition with innovation. We speak with Shams about her new coffee pop up here in Orlando!
Tell us about yourself and your background
My name is Shams, and I’m the owner of Barakah Beans. I have a degree in accounting and am originally from Iraq. While my professional background is in Accounting , my true passion lies in creating warm, welcoming spaces where people can connect often over a cup of coffee. That passion is what brought Barakah Beans to life.
What inspired you to start Barakah Beans, and can you tell us more about Arabic coffee?
Barakah Beans was born from a lifelong dream. After losing my job, I saw an opportunity to finally pursue my passion and build something meaningful. Coffee has always been a source of comfort and connection for me especially Arabic coffee, which plays a big role in our culture. Arabic coffee isn’t just about the taste; it’s about the ritual, the warmth, and the community it fosters. That tradition continues to inspire everything we do at Barakah Beans.
The name ‘Barakah’ means ‘blessing’ in Arabic. How does this concept influence your mission or the experience you want to create for customers?
The concept of barakah is central to who we are. We want each visit to Barakah Beans to be a small blessing in someone’s day, whether it’s through a smile, a meaningful conversation, or a cup of thoughtfully crafted coffee. It’s about creating moments of joy, peace, and presence.
What flavors or signature drinks should customers expect at Barakah Beans, and how do they reflect your cultural heritage?
Our menu reflects both my roots and creativity. Signature drinks include the Adeni chai—a fragrant Arabic chai with cardamom and warm spices—the pistachio latte, and our crowd-favorite Dubai chocolate latte. These drinks bring together traditional flavors with a modern twist, offering customers something familiar yet exciting.
What have been some of the most popular items so far?
Our pistachio latte and Dubai chocolate coffee have quickly become customer favorites. They’re rich, comforting, and unique exactly what we want our drinks to be. These drinks have really connected with people and represent the balance of tradition and innovation that we aim for.
Starting a pop-up comes with challenges, especially as a women-led venture. What hurdles have you faced, and how have you overcome them?
Running a mobile coffee cart has been rewarding, but also physically and emotionally challenging. One big hurdle has been the physical labor—setting up and transporting equipment on my own is no small feat. As a woman, I’ve also had to navigate spaces where I’ve had to prove myself more than once. But with persistence, faith, and a supportive community, I’ve continued pushing forward. Every challenge has made me more resilient.
What’s next for Barakah Beans? Are you dreaming of a permanent location, new menu items, or maybe expanding beyond Orlando?
We’re dreaming big! Our next goal is to open a permanent brick-and-mortar location in Orlando. We’re also working on expanding our menu to include more unique offerings rooted in our cultural heritage. Eventually, we’d love to expand into new cities—but no matter where we go, the heart of Barakah Beans will always be about community, culture, and intentional coffee.
At Barakah Beans, we aim to build community and connection. We’ve supported local causes, partnered with organizations for charitable efforts, and created spaces that encourage people to slow down and engage with one another. We’re more than just coffee we’re about cultivating belonging and giving back however we can.
Follow them online, or book them for an event at @barakahbeans on Instagram!

Enter at Nami, on the west side of the Lake Nona Wave Hotel. Valet available.
We spoke with Chef Jason Beliveau of Nami about their new menu and event – read on!
Nami blends traditional Japanese ingredients with a modern European twist—what sparked this fusion, and how do you balance these distinct culinary traditions in your dishes?
I think it comes together quite naturally. As American chefs, we’re typically taught French foundation through classic recipes, the mother sauces, technique etc. Being born and raised in the US, already lends itself to blending the American lexicon of ingredients with a European or classic influence, and for me America bridges the gap between Japan and Europe, both culturally and geographically. Training in NYC at a young age with progressive chefs also gave me not only inspiration, but a leg up on blending cuisines like Japanese and European.
Your 18-bite tasting menu at the Chef’s Counter is a highlight for diners—what’s your approach to crafting such an intricate, multi-course experience, and how do you keep it fresh for regulars?
We’re always pushing to make the best menu we can. Typically, we change a dish or two a week to keep our chef counter experience ever evolving. I think about a menu that large and intricate as an amazing album – you put it on, push play and experience it, as opposed to individual tracks or dishes.
Orlando’s dining scene has exploded in recent years—how do you see Nami contributing to the city’s reputation as a culinary destination, especially in the innovative Lake Nona community?
That’s why I am here! I’ve always kept my ear close to the ground so to speak on what cities are thriving and growing explosively in the haute cuisine world, and Orlando had my attention since my time in Paris. My good friend’s chef Lordfer Lalicon (KAYA) and Ryan Sand (AVA), who I worked with in NYC, are both raised here in Orlando, and when I saw them, both returning “home” I knew it was for good reason and wanted to be a part of it. Tavistock has really given me an amazing opportunity to collaborate with them and more amazing chefs in the city. I think Collaboration not competition is how we all grow and become mutually successful. Lake Nona is a bit of a niche and newer community on the south side of Orlando, so I look forward to bridging the gap over this huge, beautiful city with collaborations in the more established and Northern and Western neighborhoods.
Working alongside Michelin-starred Chef Freddy Money must be inspiring—what’s the most valuable lesson you’ve learned from him, and how has it shaped your leadership in Nami’s kitchen? Tell us about your background in the culinary world.
Chef Freddy Money is the man. He has passed down a lot of mentorship and life lessons about leadership and evolution. He’s always pushing, and so am I, and I think our mutual pursuit of excellence and smiling guests around the world bonds us in a way I haven’t experienced in my career thus far. I’m From Riverside, CA born and raised, spent my younger years under the mentorship of Dan Barber and Thomas Keller in NYC, then a year with William Bradley at Addison in San Diego, before moving to Chicago. I spent time at NEXT with Dave Beran and Grant Achatz, before diving into Japanese Cuisine with Mark Hellyar at Momotaro in the West Loop of Chicago. I spent 3 years there and really grew into a leader and chef. Then I spent 14 months in Paris, France which was incredible. And most recently my mentor was Stephanie Izard of Girl & the Goat, and I had the honor of helming her kitchen in Los Angeles for Girl & the Goat LA. I have been a part of 7 restaurant openings in NYC, Chicago, Paris, LA and now Orlando. I like to take the reins right from the start and build a culture and cuisine that stands the test of time.
What are some of the most popular dishes right now at Nami? What are some upcoming plans?
We’re looking forward to introducing some new dishes to our main menu, evolving the chef counter even further, especially focusing on collaborations with other great chefs in Orlando in the next year!
Tell us about Nami Nights and your approach to the menu and the bar menu.
Nami Nights is all about elegant and casual fun. Light low, Music up, and food that complements our amazing beverage offerings. As a former Izakaya chef, I lean heavily into the Japanese Idea of “Sake House” or Izakaya, where the food plays a supporting role to the fun and social pleasure of drinking with companions.
