New Restaurant Openings and Closings in Orlando – 11/12/2021 Edition

Some news on the restaurant front in Orlando/Central Florida this week:

Smoke and Donuts opening brick-and-mortar in the Milk District via Bungalower

Popular food truck Smoke and Donuts (Facebook Website) has just signed a lease for the former home of Kernel Encore at 601 N. Primrose Drive [GMap], just by Se7enbites.

Smoke and Donuts will offer lunch and dinner dine-in, take-out, third-party delivery, and catering options out of their new home, which is just around the corner from their current stomping grounds at A La Cart, where they’ve been a resident food truck since June 2020.

Avalon Park Eatery Closes

Red-Eye’s Git-n-Messy Smokehouse is now open inside of Henry’s Depot Food Hall!

The Masters of Meat at Smokey Bones are using their expertise and smokers to serve the juiciest smoked turkeys with all the fixings this Thanksgiving Day. The turkey dinner can be picked up on Thanksgiving and comes hot and ready to serve. Taste of Chengdu’s Baldwin Park location recently re-opened for take out only for now so drop by soon!

Taste of Chengdu’s Chef Tiger Tang and Paula Ahn of they are working on a few projects including reopening their West Colonial / John Young Parkway location and a new street food stall spot featuring Sichuan Chinese specialties nearby in Baldwin Park – stay tuned!!

Many people are new to Sichuan Chinese cuisine so below are some suggestions on what to order – note some of these dishes may or may not be on the regular menu as they do have seasonal specials -just show them this article and ask ahead of time if possible.

I put (spicy) next to the dishes that are “spicy” for those worried about heat – it’s part of the experience but understandable if there are those who can’t handle any spice.

First Watch, the popular daytime café serving breakfast, brunch and lunch daily from 7am – 2:30pm has officially released their new Holiday 2021 seasonal menu and we were invited to experience and savor their spring flavors.

This holiday season, First Watch’s Cinnamon Chip Pancake Breakfast is making a comeback and a few new items are making their debut – a  favorite new breakfast sandwich, a new hash and something sweet to share. My favorites definitely were the sweet and spicy (Mike’s Hot Honey!) drizzled Million Dollar Breakfast Sandwich as well as the homey hearty comforting for the winter nontraditional short rib poutine hash! Delish!

After the successes of the first Curated Experiences weekend in February and the second event in April, Curated Experiences returned for its third weekend at The Ritz-Carlton and JW Marriott Orlando, Grande Lakes on November 5-7, 2021.

In one perfectly planned all-inclusive weekend, guests at Grande Lakes Orlando enjoyed the ultimate mix of relaxation and inspiration, along with master classes, guided workshops, immersive demonstrations and more led by an array of award-winning chefs, winemakers, jewelers, artists, athletes and wellness experts.

Two-time James Beard Award-Winning Chef Art Smith of Chef Art Smith’s Homecomin’ at Disney Springs led a Cooking Demonstration on-site and headlined the Saturday evening Celebrity Chef Wine Pairing Dinner with Chef John Tesar of Knife and Spoon and special guest Chef Bradley Kilgore, an internationally-reowned chef and restauranteur whose accolades includes 2016 Food & Wine Magazine’s ‘Best New Chef’, James Beard Award nominee for the ‘Best Chef South’, and multiple nods for ‘Best Chef’ in Miami.  The dinner concluded with a private concert by Sister Hazel.

A casual Friday kickoff reception to welcome Curated Experiences attendees. Makers invited guests to amble among the whiskey carts to taste and learn.  Fine jewelry makers displayed their exquisite creations.  Guests indulged in a Taste of Grande Lakes featuring an array of small plates from the resort’s on-site award-winning restaurants, sampled a selection of Jordan Wines with Maggie Kruse, and mingled with special guest celebrity chefs Chef Art Smith and Chef Bradley Kilgore.

Meet the Watchmakers

A boutique display of 30-50 vintage and contemporary timepieces were on display and presented by experts in the field who introduced these interesting timepieces in a fun and educational manor allowing for those who may not be watch collectors to appreciate the craftsmanship and elegance of each piece.  Included in the display were some rare and unique timepieces many collectors may have not seen before.

Dry Aging: Perfume and Process with John Tesar

Guests took an in depth look at the John Tesar signature dry aging method that has made Knife & Spoon so successful and taste the difference.  Chef John Tesar was called “the single most talented cook I ever worked with” by Anthony Bourdain.  He has garnered praise from Food & Wine and The New York Times, has appeared on The Today Show and The Early Show, and is a two-time contestant on Bravo’s ”Top Chef.”

Art Smith’s Picnic Luncheon

Guests enjoyed Southern favorites such as Chef Art’s signature Famous Fried Chicken, Church Lady’s Deviled Eggs, and the legendary Hummingbird Cake.  The delicious ingredients were Florida farm sourced and served at the peak of freshness.

The Art of Chocolate

The Art of Chocolate with Pastry Chef Maggie and World Champion Ice Carver/Chocolate Sculptor Victor Dagatan. Chef Victor Dagatan ice carving skills have brought him accolades from around the world including 2014 Silver Medalist in the Cultural Winter Olympics in Sochi, Russia. He is also tasked on the resort with creating large chocolate showpieces, fruit and vegetable carvings, and crafting anything out of edible sugar.

Jordan Wine Learning Time

Celebrity Chef Dinner with Wine Pairing

Guests prepare themselves for an amazing culinary experience.  This landmark dinner is the delicious result of three acclaimed celebrity chefs, each bringing their own talents to the plate.  During the five-course meal, select fine wines were paired with each course.  The evening’s menu was reflective of the incredible culinary innovation brought to guests by their celebrity chefs.

Sister Hazel Concert

American alternative rock band combining elements of folk, jangle pop, post-grunge, and south-of-the-Mason-Dixon-Line classic rock, Sister Hazel’s earworm melodies, tight harmonies, and upbeat aesthetic helped make the Gainesville, Florida-based group a fixture on the alternative charts in the 1990s and early 2000s.  Sister Hazel is best known for their hit songs, “All for You”, “Change Your Mind” and “Happy.”

Big news this week for Orlando’s restaurant scene as for the first time ever, The MICHELIN Guide will discover and celebrate culinary gems across Florida, starting in 2022.  

Thanks to a partnership between Visit Florida, Visit Orlando, Visit Tampa Bay and the Greater Miami Convention and Visitors Bureau, Florida will be only the fifth U.S. destination Michelin has ever rated — New York, Chicago, California and Washington, D.C., being the others.

Orlando’s dining scene has continued to evolve in quality and diversity over the past few years, so hopefully with the Michelin Guide coming this will give our industry the recognition they deserve.

We asked several local Orlando restaurant owners, chefs, and diners about the news – here are some initial reactions about the Michelin Guide coming to Orlando – 

“First off, this is great for the state of Florida and Orlando, Miami and Tampa. The Michelin Guide is the hallmark for culinary excellence and Florida continues to show how our state continues to raise the bar in the culinary arena. Tabla Winter Park – Fall 2021 – New Menu Items and Delivery Ordering

Tabla Cuisine, the popular restaurant serving up Indian, fusion Chinese, and Thai dishes is getting ready to open its third location at Lake Nona Landing on Narcoossee Road. Owners Nora and Anshu Jain tell us the restaurant should be open mid to late November pending permitting. This will be their third location in addition to the original one off Kirkman Road near Universal Studios and their second location on Park Avenue in Winter Park.

Some new developments for Tabla also include a recently launched new online ordering system on tablacuisine.com as well as several new appetizer and entree courses. If you haven’t been to Tabla in a while, it is a good time to visit soon especially with these new dishes on the menu!

Michelin and VISIT FLORIDA today revealed an expansion of The MICHELIN Guide, with the announcement of The MICHELIN Guide Miami, Orlando and Tampa.

The partnership combines VISIT FLORIDA’s strength in tourism with Michelin’s 120-plus years of experience in gastronomy.

First Look: Tous Les Jours Bakery at Lotte Market in West Orlando

Last week we spoke with the staff at Bread and Co in Winter Park and found out the owners were closing both locations (Fairbanks and Lotte Market) to reopen on Friday Oct 29 as a new franchise of Tous Les Jours USA bakery! Tous les Jours means ‘every day’ in French and is a “French-Asian-inspired” bakery. As of 2021, it has more than 1,650 locations worldwide.

Walt Disney World honors its fiftieth anniversary with “The World’s Most Magical Celebration,” an 18-month event that began on October 1, 2021. Tasty Chomps – Q and A with Pam Brandon – Delicious Disney – 50th Anniversary

Tasty Chomps: What are some surprises readers might find in the new book, Delicious Disney?

Pam Brandon: This is the first cookbook where we weave culinary history and stories with the recipes. An earlier cookbook with “recipes from the vault” included vintage photos and recipes, but this one really shines thanks to my co-author Marcy Carriker Smothers, who added lots of fun history, and our editor Jennifer Eastman, who did fantastic research on photos and original renderings. I especially love the gorgeous watercolors by artist Dorothea Redmond, like the one of King Stefan’s Banquet Hall that she created in 1969, and the World Showcase dining concepts that she painted in the late 1970s. They add a real beauty to the book. And I think Disney fans will love the “Gone But Not Forgotten” chapter that includes recipes from restaurants that are gone, like the Au Gratin Potatoes from the Empress Lilly, the French Fried Ice Cream from the former Golf Resort and the Clam Dip from Captain Jack’s at the old Lake Buena Vista Village.

Looking back over the years, what are some seminal / breakthrough foodie moments at Disney World that you remember most?

I started as a senior publicist for Walt Disney World in 1987, so I’ve been so fortunate to be a first-hand participant in so many amazing moments. I think the World Showcase restaurants were a big leap, with chefs like Chef Paul Bocuse (Chefs de France was his first restaurant in America!), Chef Gaston Lenotre and Chef Roger Verge at Chefs de France – they often visited and we hosted some amazing media lunches with three of the most famous chefs in the world. The Debler family, who own a fabulous restaurant in Mexico City opened the San Angel Inn in the Mexico pavilion.

The original Alfredo’s made authentic fettuccine and other fresh pasta in the window at the Italy pavilion. This was the early 1980s, long before the Food Network or Orlando’s food evolution. Then there were fun moments, like the (short-lived) Handwich debut in the Magic Kingdom in 1987, and big moments like the early Epcot International Food & Wine Festivals in the 1990s when I got to meet Julia Child, Nobu and other greats.

But the biggest breakthrough moment was the opening of California Grill in 1995, which truly started an evolution in fine dining at Disney. That led to amazing dinners with the Disney chefs at the James Beard House in NYC as we put Disney on the culinary map.

Who are some of the biggest culinary people that you recall through your time working on this book and your time at Disney and how have they impacted you?

Dieter Hannig had the greatest impact on Disney Food & Beverage; he ran the team in the mid ‘90s and introduced California Grill and ground-breaking concepts like Jiko at Disney’s Animal Kingdom Lodge with African-Indian cuisine.

He was my greatest teacher about storytelling with food and architecture. The Disney chefs (too many to mention) are some of the most humble culinary superstars on the planet, as they don’t often get individual recognition. But I did my best to uplift them for many years as a publicist, and we shared so many fun, memorable moments with every restaurant opening.

How has the philosophy of food and beverage transformed, evolved, revolutionized over the past 5 decades?

Even on opening day of the Magic Kingdom in 1971, “eatertainment” was important as restaurants were themed with food, costuming and design., imagine stepping into King Stefan’s Banquet Hall in Cinderella Castle on opening day!

So while that concept has evolved, it’s the very heart of Disney. And fine dining has been part of Disney since the Empress Room on the Empress Lilly. I think the most dramatic change has been in the absolute attention to detail with menus for dietary needs, from common food allergies to low-carb, low-sodium and plant-based options.

What are some of your favorite recipes in the book and why?

I tested so many of the recipes during the pandemic shutdown, so I have a lot of favorites: the Gobi Manchurian from Tiffins, the Shrimp with Feta from Citricos, the Hoop-Dee-Doo Fried Chicken (first time in a cookbook), the simple Pan Con Tomate from Toledo, the Hoisin Chili Sticky Ribs from Morimoto, the Gambas Al Ajillo from Jaleo . . . OK, I’ll stop.

What do you think food and beverage at Disney will look like in the next 5, 10 years?

I don’t have a crystal ball, but I can imagine exciting new ways to dine after Space 220’s recent debut. And there’s still lots of fun dishes rolling out over the next year for the 50th anniversary celebration. The ideas are flying!

First Look: Soseki Modern Omakase by Chef Michael Collantes

We were invited to Soseki, an epic 10 seat omakase dining experience in Winter Park, located next to Austin’s Coffee.  Soseki is known for their sushi and globally inspired seasonal dishes that takes diners on a culinary journey.  Since Soseki means “foundation” and Omakase means “leave it to the chef”, guests can expect a Japanese forward menu that includes a piece by piece sushi nigiri with a modern take on European dégustation service.

Winter Park native Owner/Chef Michael Collantes and his team bring their guests on a journey of discovery from their own pasts to what excites them as evolving chefs during a 2-hour dining experience.  They introduce a unique perspective of food and beverage service to the amazing Orlando food scene by working with many local growers and vendors, and work towards new and inventive dishes and flavors playing into seasonality.

We thoroughly enjoyed the October Atlantis Experience which celebrates of the glorious offerings from our local, coastal waters.  This journey also included their interpretations of the wonderful produce sourced throughout the City Beautiful.  In addition, their beverage director, Benjamin Coutts, curated a program to accentuate the dishes but also challenge the traditional concept of beverage pairings.

Soseki’s current hours are Wednesdays for private parties, and Thursday through Sunday at 5:30pm & 8:30pm.  Reservations must be made in advance.

We spoke with the staff here and just found out the owners are closing both locations (Fairbanks and Lotte Market) this Friday October 22 and will reopen in one week on Friday Oct 29 as a new franchise of Tous Les Jours USA bakery! Tous les Jours means ‘every day’ in French and is a “French-Asian-inspired” bakery. As of 2021, it has more than 1,650 locations worldwide.

So go visit soon for a last bite of Bread & Co before they close forever on this Friday (their last day open)! The new menu will all be Tous Les Jours items.

NASA’s Kennedy Space Center hosts Taste of Space: Fall Bites 2021 Food Festival from October 8th to November 5th

From October 8 to November 5, 2021, NASA’s Kennedy Space Center Visitor Complex is hosting Taste of Space: Fall Bites! , a new Food Festival to celebrate seasonal flavors with bites and local craft brews. Kennedy Space Center is located on Merritt Island in Brevard County on Florida’s Space Coast, just a short drive from Orlando.

We are blessed to live so close to the place where America launched the first man on the moon in 1969 and continues to be a place where innovation and science propel humanity forward.

Though there aren’t any Tang or freeze-dried items on the menu this fall, there’s plenty of “out of this world” bites celebrating the fall season  (with some hints of Oktoberfest!) available for purchase.

Beer lovers will also want to stop by Planet Play Lounge to enjoy local seasonal brews from the Space Coast, while others (and kids!) can create their own signature beverage flavors with Pepsi drink machines found in Orbit Cafe.

For dessert, guests can pick up the massive pumpkin caramel éclair from Milky Way Ice Cream Shop  – large enough to feed the whole family!

To commemorate the 2021 event, when you purchase any Taste of Space: Fall Bites meal or treat, keep your receipt and bring it to the Space Shop to receive a complimentary collector’s pin! While supplies last.

Some tips – make sure you plan your day out as there is about a 30 min bus ride to and from the Moon Rock Cafe located at the Apollo / Saturn V complex center. Make a bus ride reservation using the QR code given at arrival.

  • Begin in the Rocket Garden with unique appetizers while you safely mix and mingle with veteran NASA astronauts Bruce Melnick, Winston Scott and Mark Lee.
  • Next, enjoy a fresh salad and our chef’s award-winning clam chowder at the Rocket Garden Cafe.
  • A surf n’ turf main course awaits you inside the spacious Dine With an Astronaut before embarking on your last stop: Space Shuttle Atlantis®.
  • Under the orbiter, sample a selection of desserts and experience the inaugural Marstini shake-off!

For the first time at the visitor complex, local bars and restaurants will submit their idea of a Mars-inspired cocktail for a panel of local celebrity judges. Judges will taste and select their favorite creation, and the restaurant with the winning recipe will receive bragging rights and a trophy they can proudly display in their establishment. Of course, guests of this event can also purchase any of the Marstinis made that evening.

Your enchanting stay at The Betsy begins at check-in. Guests are greeted by friendly staff, with complimentary champagne for all those over the age of 21.

We stayed in a Classic King room, which featured large plantation-style windows with views of the pool, two full-length mirrors, a comfortable king sized bed and a spacious, modern bathroom. The room has a historic charm with just the right amount of modern touches. It’s no exaggeration to say that these hotel rooms are so delightful, you’ll be tempted to stay in.

Coffee & Pastries at The Carlton Room Café

The Carlton Room Café is located on the first floor of the Betsy Hotel. This coffee bar offers Panther’s Coffee as well as an assortment of parties and baked goods. We enjoyed an Iced Vanilla Oat Milk Latter and an Iced Cappuccino.

The Guava + Cheese Pastelito is a must. This traditional Miami treat combines sweet cream cheese with delicious guava inside a flakey pastry shell. It’s a great choice for a light breakfast or an afternoon snack.

The Betsy Hotel offers an impressive array of amenities with two pools, direct beach access with exclusive beach chairs and cabanas, a rooftop bar and terrace, a spacious courtyard, two full-service restaurants, a coffee bar, a lobby bar, art, cultural events and so much more.

The Betsy Hotel even offers a large library space, ideal for catching up on some remote work or simply sitting back and enjoying a book or two.

The rooftop deck at The Betsy overlooks the beach, making it the perfect spot to relax and enjoy the view.

Head to the Beach

The Betsy Hotel is located right on South Beach, with direct access to lounge chairs, umbrellas and cabanas available exclusively for guests of the hotel. South Beach can get quite crowded at times, making the quiet and peaceful nature of the beach area in front of The Betsy so much more special. You can also order beverages and picnic bites directly from the Betsy’s beach service, and it will be delivered directly to you on the beach.

Dinner at LT Steak & Seafood

LT Steak & Seafood is a lovely restaurant located in the main lobby area of The Betsy Hotel, led by Chef Laurent Tourondel. This spot fuses together French, Asian and Latin American flavors to create a menu that is both unique and delicious.

We started off our three-course dinner with some wine, which is a must at LT Steak & Seafood.

The complimentary bread served at this restaurant is mouthwatering. Be careful to save some room for the entrees!

Crispy Calamari & Zucchini

The first appetizer we enjoyed was the Crispy Calamari & Zucchini. A unique take on an otherwise tradition starter, this dish is served with tasty jalapeño remoulade. It’s a great choice if you’re looking for something light to prepare for the main entree.

Spicy Tuna Roll

Next up was the Spicy Tuna Roll, featuring sriracha, puffed rice and shallots. The tuna was incredibly fresh, and this roll had the perfect slight kick to it. This dish works great as an appetizer or even as a shareable entree if you plan on ordering multiple plates.

Chermoula Salmon

Delicious salmon is paired with Chermoula sauce, toasted couscous, caramelized carrots, cumin vinaigrette and lemon aioli to create this elevated dish. The fish is extremely flavorful, and this combination of ingredients absolutely works. If you’re a fan of salmon or if you love unique flavor pairings, this is the entree for you.

8 oz Filet Mignon

For a juicy, perfectly-seasoned steak, be sure to order the Filet Mignon. You can choose between the 8 oz (pictured below), or the 12 oz for something a bit more filling. Our knife was able to glide seamlessly through this tasty steak, which we order medium rare.

Loaded Baked Potato

For a surprisingly tasty, and very filling side dish, try the Loaded Baked Potato. It’s served with warm melted cheese, bacon bits and green onions. It may sound simple, but this is the perfect side dish to pair with the Filet Mignon.

Crème Fraiche Panna Cotta

We found it: the perfect “Miami with a Twist” dessert. The Crème Fraiche Panna Cotta features the delicious flavors of coconut lime sorbet, key lime sauce and coconut tuile. The key lime flavor screams Miami, and it mixes deliciously with the notes of tasty coconut and lime.

In addition to the many daytime amenities available at The Betsy, nighttime was one of our favorite times to explore.

“The Betsy Orb” is a public art installation that can be viewed at any time of the day, but it looks particularly magical at night.

Aurora at Celeste Hotel – Thanksgiving Day – New Dine – In Special

The Celeste hotel is a part of the Marriott family Tribute Portfolio, located right on the UCF campus in east Orlando, and home to one of the finest new restaurants in Orlando right now.

With an emphasis on fresh, locally sourced food and the inspiring culinary genius of Chef Mike Trudnak, Aurora is the signature Celeste Hotel restaurant experience.

Despite opening in 2020 at the height of the pandemic, Aurora has really found its stride under the leadership of Chef Trudnak.

They are probably most known for their social media viral “Supernova” dessert made with a dark chocolate dome that implodes from a pour over of hot rum flamed caramel exposing vanilla bean ice cream and smashed raspberry, served on a rocky Ghiradelli brownie “planet” bed and candied walnut.

Chef Mike and the Aurora team are taking reservations now for their special Thanksgiving Day menu (which features a “white chocolate” version of the Supernova dessert) and we recently had a chance to preview the menu. The dishes were superb and probably will be the best thing being served Thanksgiving day – no offense to the home cooks out there! Delightfully, there is also quite the lovely selection of hearty vegetarian friendly dishes on the menu as well for those vegetarians in your life. Make sure to RSVP ASAP as this meal will likely sell out.

“Dear @joeBiden These are a few of the many employees of Grills who for their own reasons have decided not to get this vaccine. They are amazing, hard working, responsible people. They have been on the front lines serving the public from the start of this pandemic.
There is a moral and ethical compass severely out of calibration in suggesting they should be fired for their convictions. This vaccine does not stop spread, does not prevent infection and its ability to mitigate serious illness wanes far quicker than originally anticipated. Additionally there are significant known risks and anyone who has had Covid (like most of these pictured) now have the best God given immunity available! So why sir are these people being threatened and vilified for their own convictions and concerns about taking it?

Traditional Passover Seder Dining – Holiday Dining Tips for Passover Meals

One of the most important traditions in the Passover holiday is the Seder meal. According to Judaic traditions, this meal commemorates the mercy that God bestowed on the Jews when He spared them from the plague of death that was to befall the first-born sons in Egypt. God then delivered the Jews out of Egypt, led by Moses. All major Passover programs are offering huge range of Seder meal options for the guests, from completely Vegan Seder meals, traditional Ashkenazi or Sephardic menus, and special menus for diabetic, gluten and other food allergies. Different level pf Kashrut are also observed, but most programs are offering kitniyot free, as well as non-gebrochts, in order to attract a wider range of guests.

Preparing for and planning the Passover Meal
The seder plate must be present on the table. The plate must contain certain elements as representations for specific things.

1) A roasted shank bone represents the Pesach sacrifice [Zeroah]
2) The egg on the plate is a symbol for the circle of life and spring when life awakens after the winter [Beitzah]
3) The bitter herbs on the plate represent the bitterness of slavery [Mar’or}
4) The haroset, made of wine, nuts, apples and such is a representation of the mortar that the Jews in Egypt used [Haroset]
5) The greens, usually parsley, represents spring [Karpas]
Present on the table there should also be:
a) Three pieces of unleavened bread or matzah to represent the bread that the Israelite people took with them.
b) Salt water to represent the tears shed by the Israelites
c) Four cups of wine should be consumed during the seder and in some families a cup of water is set out to represent Miriam the sister of Moses.

The Meals
The food served at the seder will change to some degree according to family preferences, location and availability of certain items. There will not be any leavened food made from grain. There will be no pasta, cookies, or cereal served.

Dishes you might see:
• Matzo ball soup
• Gefilte fish
• Beef briskets
• Chicken
• Potatoes

Vegetables:
There are some vegetables that are better served during the Passover meal.

These include:
• Asparagus
• Artichokes
• Cauliflower
• Red cabbage
• Grilled eggplant
• Okra
• Peppers
• Tomatoes
• Zucchini
• Radicchio
• Treviso
• potatoes

Peas, corn and beans are often eliminated from the menu options because they can be pulverized into a flour substance. These are referred to as kitniyot and rice, peas, corn, millet, seeds, legumes and beans are usually left off the menu.

The main dish or the meat of the dinner has a lot of opportunities. Roasted chicken and beef brisket are two of the most popular meats served at Passover seder. Often the brisket is prepared with a chili sauce or a cola to create a sweet brisket.

Desserts
Cakes and cookies served during seder must be gluten free deserts Many of the Jewish families serve dried fruit compete, fresh berry salads and other deserts that eliminate the need for any flours of leavening agents to be prepared.

Poached pears or grilled pears are fabulous endings to a seder meal. The pears are delectable and almost everyone enjoys them. You might also consider serving a fig, pistachio and carrot salad topped with s sweet fig vinaigrette.

The main thing to remember about the dessert is it is ending a perfect meal. Mild flavors from fruits and natural sweets from the fruits will be fabulous after the richness of a beef brisket.

Plan ahead
The main thing you must remember about the seder menu is you need to plan ahead so you can make sure and have all of the ingredients you need on hand before it is time to prepare the food. You can also make as many of the dishes as possible ahead of time so cooking the meal on the first day of Passover will not wear you out and leave you frazzled. The cook also has to enjoy the holiday.

Enlist the help of friends and family. Let all of the families who will be attending the dinner contribute something to the festivities. Letting other cooks help you prepare the food, and shop for the food will take some of the pressure off of your shoulders.

Keep it Simple
Not every dish you serve has to be something that takes hours to prepare. Remember that you want to enjoy the holiday meal with your family. Consider doing things like scrambled eggs and matzo that can be served with a sweet jam or with maple syrup.

Roast a chicken with currants and apricots and get the sweetness, the exotic flavors and the roasted chicken all at the same time. It will taste like you spent hours preparing it but you will know that it was simple and quick.

Potatoes are great for filling people up and adding bulk to the table. Roast them with lavender, make them into a kugel, make latkes, or serve them how your family likes them most.

Final Thought
The traditional Jewish Passover foods are unleavened because when the slaves left Egypt they did not have time to let their bread rise. Everything about the meal has a purpose and significance, be sure you share the stories and significance with the younger people at the table so they can continue the tradition.

Inside Look: Knife & Spoon One Year Anniversary Dinner Benefiting Parramore Kidz Zone

Knife & Spoon, the signature steak & seafood restaurant led by award-winning Chef John Tesar at the Ritz-Carlton Orlando, Grande Lakes celebrated its first anniversary last night with a very special five-course celebration dinner event on Thursday, Oct. 7, with celebrity chef and Knife & Spoon founder John Tesar, James Beard award nominee chef de cuisine Gerald Sombright, and Executive Pastry Chef Stephane Cheramy, all from within the resort.  Joining them were special guest chefs Alex Seidel of Denver (Best Chef: Southwest James Beard Foundation Award in 2018) and Top Chef finalist Casey Thompson.

Since opening Knife and Spoon has been awarded Orlando Weekly’s “Best New Restaurant 2020, #1”, USA Today 10Best “Best New Restaurant in 2020, #2”, The Daily Meal “Most Anticipated Restaurant Openings 2020”.

The event benefited Parramore Kidz Zone which aims to reduce juvenile crime, teen pregnancy, and high school drop-out rates in Orlando’s highest poverty, highest crime neighborhood, and ultimately replicate this model in other Orlando neighborhoods also struggling with disproportionately high rates of juvenile crime, school failure and teen pregnancy. PKZ is achieving this by investing in things that make a difference in children’s lives – such as quality early childhood education, after school programs, programs that build family economic success, youth development programs for teenagers, access to health care, mentoring and more.

Foodie’s Guide to Universal Orlando’s Halloween Horror Nights 30: Never Eat Alone 2021

Spooky season has officially arrived at Universal Orlando Resort, marking the terrifyingly delicious return of Halloween Horror Nights. Halloween Horror Nights (HHN) is an annual celebration of all things horror and fear.

This year, Universal celebrates Halloween Horror Night’s 30th anniversary with HHN30: Never Go Alone. In addition to 10 haunted houses, five scare zones and two chilling shows, Halloween Horror Nights 30 offers a haunting array of themed food items.

HHN30 takes place on select nights from Sept. 3 to Oct. 31, 2021. This after-hours event begins at 6:30 p.m. and runs until 1 a.m. or 2 a.m. depending on the date. To purchase tickets today, visit Orlando.HalloweenHorrorNights.com.

Blood N’ Guts Twisted Taters

Twisted Taters are a classic Horror Nights treat. You can enjoy the Classic Twisted Taters, or try a specialty flavor like Ghost Pepper for some spice, or our personal favorite: Blood N’ Guts, which is topped with chili and roasted red pepper queso. Twisted Taters are one of the most popular snacks at Halloween Horror Nights, and for very good reason.

Bánh Mì

Available at the San Francisco Food Truck.

At the food truck located in Universal’s San Francisco area, guests can order any of three tasty chicken sandwiches: Buffalo Hot, Bánh Mì or BBQ.

The Bánh Mì combines hand-breaded chicken tenders seasoned with Thai chili sauce, topped with pickled vegetables, cilantro, cucumber and sriracha aioli on a soft roll. This is one of the most flavorful and filling dishes you can get at the entire event. The sandwich is huge, and seasoned to perfection.

HHN Themed Cocktails

Available at kiosks throughout the park.

Throughout the park, many of the themed food stands offer different cocktails themed to the event. Available cocktails include:

  • Ghoul Juice (mango rum with cherry, lime and allspice)
  • Bog Slime (pictured below — gin, lime juice and house-made matcha-cardamom syrup)
  • Jack’s Old-Fashioned Jack and Coke® (Tennessee whiskey, cherry brandy and old-fashioned syrup)
  • Poison Tea Party (iced tea and lemonade rum punch with huckleberry and allspice)
  • Texas Heat Margarita: (spicy tamarind margarita with a chile lime spiced rim)

Pay a few dollars more for the souvenir cup and you’ll receive discounts on all alcoholic cocktails for the rest of the evening (plus, they glow in the dark).

Jack’d Donut Slider

Available at Jack’s Place and Carnival Courtyard. 

This is not your average spooky slider. The Jack’d Donut Slide features a beef patty with bacon jam and American cheese sitting in between two bourbon-glazed donuts. For some reason, this dish just works. The sweet bourbon flavors from the donut pair wonderfully with the beef patty and bacon jam. This is a great option for a light snack during your HHN adventures.

No “Chance” in Hell PB&J

Available at Jack’s Place and Carnival Courtyard. 

It sounds simple, a fried peanut butter and grape jelly sandwich with hot honey drizzle and red pepper flakes on top. However, this little sandwich is terrifyingly tasty. Think back to the Uncrustables® from your childhood, and now imagine them with a crispy fried outer layer and a slightly hot kick. That’s exactly what the No “Chance” in Hell PB&J tastes like, and it’s so amazing we want 20.

ACE SpACE Beer Float

Available at Revenge of the Tooth Fairy kiosk. 

Craving an alcoholic creamsicle in a cup? Look no further! The ACE SpACE Beer Float combines SpACE Bloody Orange Cider with vanilla ice cream, whipped cream and a dehydrated orange on top. The flavors of the orange cider and the vanilla ice cream and whipped cream create the most delightful and refreshing creamsicle beverage you can imagine. If you’re over the age of 21 and looking for something sweet during your HHN visit, run to the Tooth Fairy kiosk and order this drink right away.

Severed Body Rib Bones

Available at Texas Chainsaw Massacre kiosk. 

Enjoy a generous portion of bbq ribs with a side of white bread, pickles and sauce. The Severed Body Rib Bones are another great option if you’re looking for a dish that will fill you up. Make sure to ask for extra bbq sauce on the side to really make the most of the flavors.

Pizza Fries

Available at Kidzone Pizza Company. 

Pizza Fries are another beloved bite available every year at Universal Orlando’s Halloween Horror Nights. Combine the deliciousness of pizza and fries, and you get this tasty platter. Pizza Fries are made with french fries, marinara sauce, melted mozzarella, sausage and pepperoni, with seasoning dusted on top. This is another unique combination of food that just works. If you can only try one food item at the entire event, it should be the Pizza Fries.

For a sweeter twist on the original, try the S’mores Fries, made with sweet potato fries with marshmallow, chocolate chips and graham cracker crumbs.

HHN Tribute Store

Located in Universal Studios Florida’s New York area. 

More sweet treats can be found inside the Halloween Horror Nights Tribute Store, located in the New York area right by the Revenge of the Mummy roller coaster. Explore rooms inspired by different Halloween Horror Nights 30 themes.

Mel’s Die-In is another classic Halloween Horror Nights eatery. While there isn’t any specialty HHN30 food here, it’s still a great spot to enjoy burgers, fries and milkshakes in between haunted houses.

“Chance” HHN Icon Cocktail

Located at all on-site Universal Orlando Resort hotels. 

Stop by any Universal Orlando Resort on-site hotel to try these three themed HHN Icon cocktails:

  • Jack the Clown (Jack Daniel’s Tennessee Whiskey, cherry brandy, Coca-Cola Zero Sugar and house-made Demerara old fashioned syrup)
