Game of Thrones – Inspired feast at Luma on Park

0

Luma on Park Hosted their second Game of Throne-inspired 8-course dinner by chef Michael Cooper, the tasting menu featured a collection of eight “GoT”-branded Scotch whiskeys.

Each bottle is a single malt crafted by a renown Scottish distillery. And each corresponds to a different House of Westeros, plus one for the Night’s Watch. For example, the Cardhu distillery represents the House Targaryen — both ruled by powerful women. The Oban distillery as well as the Night’s Watch sit on the border — one between Scotland’s western islands and highlands, the other between the Seven Kingdoms and the wild North.

Very clever menu presentation!

Fiorenzo at Hyatt Regency Orlando

Fiorenzo, which means blossoming or flourishing in Italian, recently underwent renovations and a name change, dropping the “Italian Steakhouse” moniker.

Fiorenzo is led by Chef Jared Gross who graduated from Pennsylvania Culinary in 1997, and started his career at The Peabody Orlando (which became Hyatt Regency Orlando in 2013) as a line cook and advanced to Sous Chef to Chef de Cuisine within 4 years at Capriccio Italian Restaurant (now Fiorenzo).

Chef Jared Gross

Chef Gross led the hotel’s fine dining restaurant DUX, and then with the re-opening of the highly acclaimed Napa restaurant which after the sale to Hyatt became Urban Tide a Coastal Seafood Centric Restaurant. Currently he is in charge of Fiorenzo Italian Restaurant and the culinary operations for our 24 hour Market

We chatted with Chef Gross about his upcoming plans for Fiorenzo as well as culinary inspirations growing up.

TastyChomps: What’s new at Fiorenzo? Any upcoming plans for Fiorenzo this year?

Chef Jared Gross: The Fiorenzo restaurant space was recently renovated with the addition of new breakfast and lunch options. We have plans for special events and smaller intimate chef tastings but are still in the planning stages, so stay tuned for what’s to come in the near future. We have currently added a Vegan Menu to both our lunch and dinner options.

What are some personal touches you have made on the new Fiorenzo menu?

The addition of our new Breakfast and Lunch menus as well as a Short-Rib Bolognese Sauce which is a favorite – we braise fresh beef short-ribs for 5 hours in our homemade pomodoro tomato sauce till fork tender.

SHORT RIB BOLOGNESE
bucatini pasta | italian parsley | pecorino

What are some of the most popular dishes right now at Fiorenzo?

Popular Lunch Items

1. Braised Short Rib and Ricotta Gnocchi, Barolo Wine Sauce, Shaved Horseradish Cheddar
2. Open-Faced Salmon BLT, Pickled Pepper and Artichoke Relish, Caper Crème Fraiche, Saffron Mayo.

Popular Dinner Items

1. Prime Bone-In Ribeye with Black Truffle Butter, Warm Spinach and Wild Mushroom Panzanella, Marsala Glaze
2. Branzino, Spring Pea Milk, Orzo, Cippolini Onions and a Fresh Pea Tendril and Corn Shoot Salad

What are some of your favorite dishes on the menu that people should try?

During lunch you need to try Nona Meatball Salad (yes – it is a 7 ounce Meatball in the middle of an Italian Salad) with Candied Lemon Vinaigrette and as mentioned above the Braised Short Rib and Ricotta Gnocchi Dinner.

NONA’S MEATBALLS
nona’s house made meatballs | marinara sauce | buffalo mozzarella | basil oil

Our 20 ounce Prime Bone in Prime Rib and 8 ounce Filet, Prime beef Short-Rib Bolognese with Sunflower Seed Pesto Bucatini Pasta and Whipped Ricotta are also some favorites.

PRIME BONE-IN RIB EYE
truffle butter | house steak sauce | horseradish cream | peppercorn sauce

What is something people can find here at Fiorenzo / Hyatt and nowhere else?

Food that is Thoughtfully Sourced and Carefully Served.

What are some of the greatest influences in your life in becoming a chef?

Growing up in a small town where farming and livestock are everywhere you turn, the fresh smell of the fields and rows and rows of fresh corn, seeing the time and dedication it takes to produce and care for the items that go onto every plate is what makes working in the kitchen so rewarding.

What are some of your favorite food memories growing up?

Holiday gatherings and the spread of food that my family would produce and how it brought everyone together on those special occasions.

The Apple harvest festivals in Central Pennsylvania every fall.

What is the secret to cooking great Italian dishes?

Keep it classic and simple and utilize traditional Italian cooking techniques and seasonal ingredients. Do not over sauce pasta, light coating so you can still enjoy the fresh taste and quality of the pasta without it being saturated and hidden.

What are some ingredients that you love working with right now?

Caulilini- is by far my favorite new vegetable, it is a hybrid of cauliflower and broccolini, it is tender and sweet but still has the flavor of broccolini. Of course the fresh rotation of the seasonal Floridian Seafood and Shellfish is definitely a luxury to us Chef’s in Florida to be able to share with our guest.

Where do you like to go eat when you aren’t working?

Mi Casa (my home) for sure, relaxing, cooking and enjoying time off with my girlfriend and my dogs.

What do you make when you have no time or when it is really late at night – some thing that just hits home?

Warm Tuna Salad, tossed with Buttered Farfalle and Hot Sauce topped with Crushed Salt and Vinegar Chips, it’s quick, easy and super tasty. This was one dish my parents made a lot when I was a young.

Wayuu – New Authentic Colombian and Venezuelan Restaurant Hits Kissimmee Streets

Wayuu recently joined the Orlando food scene and we received an insight on the delicious culinary adventure they offered.

We began searching the menu with drinks in our hands. They offer a range of natural juices (passion fruit smoothie pictured on the right), imported sodas, bottled water, domestic sodas, and Agüapanela (pictured on the left).

Agüapanela is a traditional Colombian sugarcane and lime drink commonly served on hot summer days. You’ll need to enjoy the natural juice smoothies fast or you’ll see the separation as seen in the photograph. Don’t worry, it’s still tasty even after the separation occurs.

Here, they serve Colombian AND Venezuelan empanadas. The top is a Venezuelan ground beef empanada and the lower is a Colombian cheese empanada. There are different options for fillings for both types of empanadas for you to choose. The Colombian empanada pockets are a sweet compared to the Venezuelan empanadas, but both are recommended for you to try.

The Bandeja Paisa is served as grilled steak, fried pork belly, fried egg, white rice, pinto or black beans, corn arepa, avocado, and sweet or green plantains. If you like protein, this is the plate for you. Each item on this dish has its own flavors and textures.

The Colombian burger is made of ground beef patty, lettuce, tomatoes, ham, cheese (white or yellow), bacon, string potatoes, pineapple sauce, and sliced grilled pineapple. The pineapple is a staple found in Colombian burgers. It adds a little sweetness to each bite as well.

The Cachapas is Venezuelan sweet corn cake served with mano cheese, white cream and white shredded cheese. This is commonly ordered as a dessert in Venezuela.

Tequenos are Venezuelan cheese sticks. They’re filled with delicious cheese in a crispy exterior. Commonly dipped in their pink sauce.

The Tequeyoyo consists of a whole sweet plantain, ham and cheese. This was an interesting find and nice to bring on trips to easily eat.

Finish off with some sorbet or dessert tequenos. There are guava and cheese or nutella filled. I love guava so it was an easy pick for me.

BaanChan Thai in East Orlando – Interview with Chef Tony Sueasakul

BaanChan Thai restaurant recently opened in East Orlando and we immediately became big fans of Owner-Chef Chaiwat “Tony” Sueasakul and his restaurant’s take on traditional Thai cuisine.

Some of our favorite dishes liked the grilled chicken wings, Thai heaven beef (a type of Thai beef jerky), and Baan Chan’s own jumbo shrimp ramen noodle with a sweet and sour tom yum style soup are dishes you hardly ever find in other Thai restaurants.

Chicken Pad Thai

We spoke with Chef Tony about BaanChan and also to get to know a little more about his restaurant’s inspiration.

Chef Tony has lived in Orlando for about 12 years and enjoys eating food all around the world such as Thai, Peru, Laos, Japan, Korea, Cuba, French, Vietnam, India, and Philippines. One day, he wanted to cook food the way he tasted it at home.

Coconut Soup
Mushroom, red bell, green bell, and scallions in a coconut galangal broth.

Chef Tony: “When I was a little boy I loved to cook, spending hours in the kitchen with my lovely mom, making a mess but learning delicious traditional Thai recipes, using authentic, seasonal, fresh ingredients and preparing everything from scratch. Today, I am still that same little boy playing in the kitchen; I like to experiment with different tastes and textures, taking from the Thai culinary culture to create my own personal recipes. ”

Thai Sausage

“Thailand’s food cuisine is divided into four regions (North, South, Middle, and Northeast) that is different in taste and texture. We learned to cook deeply in the five tastes: sour, sweet, salty, bitter, and spicy. Also, we studied Thai food recipe and international food to adapt our style.”

Pineapple fried rice
Stir-fried with jasmine rice, egg, onion, pineapple, pea, carrot, cashew nut and a hint of curry powder

Tasty Chomps: What are some of the greatest influences in your life in becoming a chef?

Chef Tony: There was a time when I was a dishwasher. I liked to observe all the dishes that customers eat. It’s like a psychosis. And I would like to sneakily look at customers when lifting the bowl of noodles or eat it completely. It makes me feel good that customers like to eat. My favorite moment is when after customers finish eating, there will be a smile of happiness that I can almost touch – this feeling made me want to become a chef.

In the past, I was terrible at cooking. Most other people will practice doing it only 2-3 times and the dish is perfect. But I have to practice at least 10 to 100 times to be able to get the plate perfect. So, I learned about new trends in food and tried new foods. Indeed, I love cooking simply and passionately.

Baan Chan Ramen -Light deep fried Shrimp with soy soft boiled egg, spicy lemongrass soup, mushroom, onion, scallion, cilantro and lime juice.

What are some of the most popular dishes right now at Baanchan?

Grilled Pork, Som tum salad (Green papaya, carrot, snake beans, tomato, garlic, chilli, roasted peanuts with lemon and tamarind dressing.), Pad Thai noodles

Tell us all about Baanchan? What was the inspiration behind it?

Baanchan means my house is for chilling, is friendly, and is simple and laid back. It’s like staying at a home with parents that always cooks food for you. Four years ago, I felt like running out of passion as a chef. I worked at Dragonfly and one day I met the executive chef “DQ”. I followed his advice and guidance and for this reason it changed my perspective completely. He was not born the perfect chef, but never gave up on obstacles and would make difficult things become easy things. I believe his idea for working in a realistic world is the right thing to do: Practicing and learning every single day.

Before I planned to open the restaurant, the  idea came up in my head every day that I have to do like this and like that. It’s like a short film and I follow to do it. It might sound funny, but it’s true. Fun fact: I never told this story to anybody even my sister.

What makes Baanchan different than other Thai restaurants in Orlando?

We make the food not just only eating but we make the food to enjoy with great flavor.

What are some of your favorite dishes on the menu that people should try?

Tomzaab pork (Garlic cloves , galanga, kaffir lime leaves, lemongrasses, long coriander, rice powder, and tamarind), kra-praw muu-sub with egg, kow-kha-moo (coming soon)

Pad See Ew Noodles

What is the secret to cooking great Thai dishes?

Understand that cooking has an external appearance, taste, and smell. And it can be called “art” that can be created without limits. So I am always practicing and learning new things.

What are some ingredients that you love working with right now?

Lemongrass, coriander, cinnamon, tamarind, alcohol-base mixed

Pa-Nang Curry
red curry, eggplant, bamboo shoot, bell pepper, basil, and coconut milk.

Where do you like to go to eat when you aren’t working?

Gyu-kaku, Slapfish, Peter’s Kitchen China Bistro

What do you make when you have no time or when it is really late at night – some thing that just hits home?

Omelet with rice. Back to basics.

Any upcoming plans for Baanchan this year?

The next project, I set the next 18 months, probably the second location, will try to make Thai food more traditional and more Thai desserts. I do my best.

First Look: Storybook Dining with Snow White at Artist Point at Disney’s Wilderness Lodge Resort

0

A hush fills the night air as the sparkling lights in the Enchanted Forest tree branches above begin to change colors and a song begins – “Hi ho, hi ho, it’s off to work we go” and scenes from Walt Disney’s first feature-length animated film Snow White is brought to life. Grumpy and Dopey – of the Seven Dwarves fame – prance out to the song and children and families clap along as dinner is served at Artist Point.

There’s been a change in the program at Artist Point with the recent addition of “character dining” and a new prix-fixe menu. Guests visiting Artist Point at Disney’s Wilderness Lodge Resort can now book “Storybook Dining at Artist Point with Snow White” — a delicious, fanciful dinner with table side visits from favorite characters such as Snow White, Dopey, and Grumpy. Make sure to visit The Queen lurking at her lair for a photograph – some say she was once the fairest after all.

Dinner is a prix fixe menu, including shared starters, a choice of individual plated entrees, and ‘sweet spells’ to top off the meal.

Quench your thirst from the list of creative and fun cocktails (and mocktails) and a variety of beers in bottles and on draft. Choose from cocktail options including The Smoking Mirror, The Antidote, the Enchanted Apple, Alchemy, Evil to the Core, and A Brew of Peaches. A wine list with a focus on the most highly rated wines from Oregon and Washington State rounds out the beverage menu. These specialty drinks are extra on top of the prix fixe menu prices.

The Smoking Mirror – rosemary smoke, Johnnie Walker Black whiskey, wildberry and lime.

The Enchanted Apple – Skyy Citrus Vodka, DeKuyper Pucker Sour Apple with white cranberry juice.

Begin with shared appetizers including Hunter’s Pie, Winter Squash Bisque and Wicked Shrimp Cocktail.

Winter Squash Bisque – served in a black cauldron with a caramel marshmallow lollipop

Hunter’s Pie – chicken pies with black truffle served with stone fruit preserve

The Wicked Shrimp Cocktail – with soy, miso, avocado, Thai chili, and greens.

Choose your entrée from a prix fixe menu including Feast on the Royal Prime Rib Roast, Brother’s Grimm Roasted Chicken, Magic Mirror Slow Braised Veal Shank, Seafood Stew and Bashful’s Butter Poached Snapper or enjoy the vegetarian option—A Stroll Through Nature—featuring butternut squash, arugula and gnocchi.

Children can choose from a selection of kid-friendly items, including Royal Prime Rib Roast, Grilled Chicken, Princess Pasta and Vegetarian Steam Bun.

Royal Prime Rib Roast
A plate with a slice of rare prime rib, mashed potatoes, grilled carrots and Yorkshire pudding

“Cottage” Seafood Stew – Shrimp, Bay Scallops, Mussels, Tomato, Fennel

Brother’s Grimm Roasted Chicken – served with confit potatoes and roasted Brussels sprouts.

Stroll through Nature – gnocchi with butternut squash, arugula, sage, and parmesan cheese.

For a “sweet ending” there’s a tasting of the “Poison” Apple; Fairy Tale Gooseberry Pie; a sponge cake with chocolate gems and buttercream icing called Miner’s Treasures; and The Hunter’s Gift to the Queen, which features cracked maple popcorn with a ganache heart.

The desserts are shared, so you don’t have to choose—you get one of each!

No Black Forest Cake on this dessert menu – yet.

Miner’s Treasures – Sponge Cake, Chocolate Gems, and Buttercream Icing

“Poison” Apple – White Chocolate-Apple Mousse, Sour Center

Fairy Tale Gooseberry Pie – Meringue, Gooseberry

The Hunter’s Gift to the Queen – Crackled Maple Popcorn, Ganache Heart

The Dinner occurs from 4:00 – 9:00 PM each evening. Prices are: Adults (ages 10+) $55.00, Children (ages 3-9) $33.00 / One (1) Disney Dining Plan Entitlement per Adult/Child

Blended Bistro & Boba Joins College Park

There’s a new Bistro in town and it brings tasty Vietnamese dishes and drinks. We stopped in for a taste.

Sip on some honey boba milk tea while you wait on your food to arrive to the table. This place makes boba really well. Some places don’t cook it enough or cook it too much, but this place makes it JUST right.

Share some baos with friends – either order them by each meat where you get two or pick a bao flight where you can pick three different baos. Here, we have the grilled pork and sweet & spicy BBQ jackfruit. The crispy wonton helps bring a crunch to the sweet & spicy BBQ jackfruit bao.

The grilled pork noodle salad has always been a favorite dish of mine because we make it at home, which is easy to make if you ever wanted to make yourself. However, don’t forget the fish sauce or else it’s pointless getting this dish. The fish sauce adds amazing flavors and moisten the noodles for each bite.

Oh the other hand, another staple Vietnamese dish is pho, which is a noodle soup. The base consists of noodles and broth. You can pick as many types of protein as you’d like and prices vary by what protein you choose. In my case, I chose the beef combination, which includes steak, meatballs and brisket. Lastly, pick whatever herbs you’d like. In my case, I picked them all – bean sprouts, basil, onions, cilantro, scallions, lime and jalapeños.

For more information, check out the Blended Bistro & Boba website.

The Keto Diet for Beginners Plus 5 Keto Snacks

Disclaimer: I am not a registered dietician or medical professional, so please consult your doctor or nutritionist before going on any diets.

You may have heard of the ketogenic or “keto” diet from co-workers, family, and friends. It sounded a bit extreme to me at first, but I tried it out after hearing about it from my own friends and family, I looked into it some more.

Instead of eating sugary snacks or carbs like rice and pasta or junk food (chips), I would be replacing these foods with more cheese, avocado, and green vegetables. Instead of a burger with buns, I would eat the burger fillings with lettuce. At first, it was hard but I learned to get snacks (see below) and stay hydrated with electrolytes. Soon I felt like I had more energy and focus than before and even was eating more vegetables than I had ever before because I was eating my greens instead of rice or noodles. Just reducing my sugar intake has helped me so much from reducing inflammation to having more energy.

I am happy to report, since October 2018 to April 2019, I am down 34lbs from 209 lbs to 175 lbs on the keto diet. It’s been an amazing journey so far and I hope to continue this.

What is the Keto Diet?

The ketogenic diet focuses more on eating protein and fat and less from carbohydrates – think sugar, soda, pastries, and white bread – usually less than 20 grams a day from carbs (which includes sugar). This reduction in carbs puts your body into a metabolic state called ketosis. When this happens, your body becomes incredibly efficient at burning fat for energy. It also turns fat into ketones in the liver, which can supply energy for the brain.

Basically, when you are eating less carbs and more fats, you are using more fat as your energy instead of storing fat in your body. The first few weeks are the most dramatic, probably due to water weight loss, but for me it averaged about 1 lb a week loss after that. I did not count calories during the entire time and only counted the carbs – but it might be a good idea to count calories if you are having trouble with weight loss after a few weeks.

Recent studies show that the keto diet can help people lose weight and improve health and may even have benefits against diabetes, cancer, epilepsy and Alzheimer’s disease.

Here are some tips I have learned along the way on this Keto Journey.

Foods to Avoid

  • Any food that is high in carbs should be limited. Use google to find out how much carbs your foods have – it is eye opening. I think my biggest surprise was how much sugar a lot of sauces have.
  • According to the American Heart Association (AHA), the maximum amount of added sugars you should eat in a day are (7): Men: 150 calories per day (37.5 grams or 9 teaspoons) Women: 100 calories per day (25 grams or 6 teaspoons). Imagine how much sugar is in a can of soda and you can imagine how our current diets are totally above the current recommendations for sugar.
  • Avoid carb-based foods like grains, sugars, legumes, rice, potatoes, candy, juice and even most fruits, except small portions of berries like strawberries.
  • Be careful of sauces which often are high in sugar.
  • Limit Unhealthy fats including processed vegetable oils, mayonnaise, etc.

Foods to Eat

  • You should base the majority of your meals around these foods: Meat, fish, eggs, cheese, nuts, avocado, green veggies and low-carb veggies, hot sauces / spices. It is best to base your diet mostly on whole, single-ingredient foods.
  • Switch out rice for cauliflower rice, pasta and noodles for shirataki noodles or zucchini noodles, and add an avocado or more green veggies to your meal to make up for the base.

5 Favorite Keto Snacks

Great snacks for a keto diet include pieces of meat, cheese, olives, boiled eggs, nuts and dark chocolate.

Here are some of my favorite snacks:

  • Moon Cheese – an all natural gluten-free crunchy snack made entirely out of 100% cheese!

  • Chicharrones / Pork Rinds – Epic Provisions Artisanal Oven Baked Pork Rinds
  • Avocado – lightly salted

  • Coffee with heavy cream or coconut oil

  • Seaweed Snacks

Tips for Eating Out on a Ketogenic Diet

  • Most restaurants offer some kind of meat or fish-based dish. Order this, and replace any high-carb food (tortillas, rice, bread, pasta, etc.) with extra vegetables.
  • Egg-based meals are also a great option, such as an omelet or eggs and bacon.
  • Burgers – Go for bunless burgers and swap out fries for veggies.
  • At Mexican restaurants, you can enjoy any type of meat with extra cheese, guacamole, salsa and sour cream.
  • Wondering if a dish or food item is keto friendly? Use google to search for the dish and add keto or carbs to the search query to find out more information.

Other Keto Diet Tips I Learned…

  • A ketogenic diet can also change the water and mineral balance of your body, so adding extra salt to your meals or taking mineral supplements (electrolytes) can help. For minerals, try taking 3,000–4,000 mg of sodium, 1,000 mg of potassium and 300 mg of magnesium per day to minimize side effects. I use Ultima electrolytes which have no sugar.

In conclusion, as with any diet, it will only work if you are consistent and stick with it in the long term. I think for me I will be on this diet/lifestyle for a long time.

Sip, Savor and Meet Pulitzer-Prize Winning Author Gilbert King At 12th Annual ‘Reading between the Wines’ Event April 17

Orlando Sentinel ‘Taking Names’ Columnist Scott Maxwell to Emcee Event

ORLANDO, Fla. (March 2019) – Pulitzer-Prize winning and best-selling author Gilbert King will headline the 12th annual “Reading between the Wines” Adult Literacy League (ALL) fundraiser April 17, 2018 from 6-9 p.m. The event at Orlando Science Center is presented by Bank of America.

The April fundraiser will welcome award-winning Orlando Sentinel “Taking Names” columnist Scott Maxwell as event emcee, and guests will hear from ALL students who’ve made remarkable strides toward reaching life goals.

Guests will enjoy a generous selection of food and wine offerings from top Central Florida restaurants and can participate in a silent auction featuring several high-value surprises.

King, who won the 2013 Pulitzer Prize for General Nonfiction with his historic and suspenseful “Devil in the Grove: Thurgood Marshall, the Groveland Boys, and the Dawn of a New America,” recently published “Beneath a Ruthless Sun,” called “riveting” by the Washington Post and “remarkable” by The Christian Science Monitor. Both books tell gripping narratives of Florida crimes and injustices.

Before meeting King, guests can mix and mingle while enjoying savory and sweet tapas-sized noshes by top Orlando restaurants including Swine & Sons Provisions; 4Rivers Cantina Barbacoa; Old Hearth Bread Company; The Palm Restaurant; Buca di Beppo; plus Raglan Road Irish Pub & Restaurant and Chef Art Smith’s Homecomin’ Florida Kitchen, both of Disney Springs. Several donors are providing wine, and beer is from Ravenous Brewing Co. Guests also can enter a raffle and bid on silent auction items that include everything from vacation and restaurant packages to signed books and entertainment-experience gift cards.

All event proceeds will support Adult Literacy League (ALL) programs and services designed to build a literate community. ALL provides one-to-one tutoring and classes to more than 3,000 adult learners and provides books and learning materials to more than 1,000 preschoolers and their families each year.

Tickets for the event are on sale now. Individual tickets are $99; a $750 Connoisseur’s Table includes four event tickets, a reserved cocktail table, two gift bottles of wine and recognition as a sponsor in the event program.

When the sipping, noshing and bidding wind down, guests can grab a seat to hear Maxwell moderate a sure-to-be-fascinating discussion with author King, who will sign books afterward.

Visit www.adultliteracyleague.org for more information. To purchase tickets to Reading between the Wines call 407/422-1540, ext. 112 or click on http://www.adultliteracyleague.org/buy-tickets/

ALL holds classes in Adult Basic Education (ABE) and English for Speakers of Other Languages (ESOL), and its Family Literacy program teaches parents to become the first and most effective teacher in their children’s lives. When an adult cannot read, it is a detriment not only to the individual, but also to our community. Harbor Nights Primavera – Loews Portofino Bay Hotel at Universal Orlando

We attended Harbor Nights at Loews Portofino Bay Hotel as media guests and we really enjoyed ourselves!  During this incredible ticketed event, guests got to try select wines and expertly prepared gourmet foods from each of the hotel’s restaurants in surroundings inspired by the beauty and charm of the picturesque seaside village of Portofino, Italy.  My personal favorite was the grilled beef petite tender with Boursin cheese mashed potato, wild mushroom and peek rags from Sal’s Deli Market.  I visited their station twice and I am now regretting not going back for thirds.  The ricotta, gorgonzola, and pear-filled cannelloni from Bice Ristorante was my second favorite.  It was so delicious!

New French and Korean Artisan Bakery – Bread & Co – now open in Winter Park

Bread & Co, a new French and Korean Artisan Bakery is now open in Winter Park, right off of Fairbanks Ave and US 17-92 in the former location (briefly) of Wonton Kitchen. The name is rather generic, but what lays inside is anything but.

Inside, there’s a modern cafe set up with the smell of sweet pastries, baguettes, and breads filling the air. But there’s some Asian influences as well to the traditional French pastries – here you’ll find breads a little lighter, fluffier, and slightly less sweet as well as flavors such as green tea, red bean, yuzu cream, and condensed milk.

As they are in soft opening mode (kind of like beta testing mode), you can find curious neighbors enter the shop, happy and delighted smiles on their faces as they see the beautiful cakes and buns to be found inside. In a corner, a group of young Korean women chatter about their day over coffee and pastries.

Looking around you can see some traditional French pastries such as croissants but also Asian favorites such as red-bean filled mochi rice cakes and Korean influenced French pastries like the soboro-ppang and “hot dog” buns.

Soboro Bun

Soboro-ppang is a sweet bun with a streusel-like upper crust popular in Korea. The bun is made of flour, sugar, eggs, and dough and baked with a crisp, bumpy surface on top. It is very similar to the Cantonese “pineapple” bun or Japanese melonpan. Inside it is a slightly sweet and delicious custard filling. Definitely recommended.

Another favorite was the condensed milk bread loaf, lightly sweet and airy – just a perfect sweet bread.

Definitely worth a visit for the gorgeous spectacle alone – and I dare you to not buy something to gorge upon when you make your visit here.

More details to come…

Ethos Vegan Kitchen Makes Even the Most Skeptical Omnivores Feel at Home

By Kristen Pizzo

If just hearing the word “vegan” intimidates you, Ethos Vegan Kitchen can provide the exposure therapy you need to help you conquer your fear.

This family-owned, local plant-based eatery was born in 2007 from the creative fusion of the minds of husband and wife team Kelly and Laina Shockley. Kelly provides the cooking expertise
and Laina is a seasoned businesswoman with a background in hospitality and a penchant for baking.

The couple designed Ethos to be a truly ethical restaurant down to its core. The establishment sources fair trade foods, ensures that no sweatshop labor is used in the making of the employee uniforms, uses sustainable produce, offers biodegradable takeout boxes, minimizes the use of disposable utensils and uses LED bulbs in the restaurant lighting.

A warm, inviting family-friendly space decorated with eclectic art from local Orlando artists and household names like Jean-Michel Basquiat, Ethos could almost be mistaken for a local diner. Complete with booths and a seemingly endless L-shaped bar, the unpretentious eatery makes vegan seem quite approachable.

But, if you’re seeking vegan eats for the health benefits, look elsewhere. You won’t find a menu peppered with kale-based dishes, salads, juices, kombucha, acai bowls and other earthy-sounding options at Ethos.

Instead, you’ll be welcomed by jazz pouring over the radio and familiar dishes; plant-based takes on traditional comfort food. Calzones, lasagnas, Philly cheesesteaks, macaroni and cheese…the menu is hardly exotic. What distinguishes the eatery is how much everything fools you. My omnivorous parents fell instantly in love when I first took them, even though they are usually skeptical of vegan cuisine.

For non-vegans looking to get a taste of this trendy, ethical diet, Ethos is the place to test the waters. And don’t worry about not fitting in. The clientele is as diverse as the artwork on the walls, so if you don’t fit the vegan hipster profile, you won’t be alone. The front porch is often teeming with waiting families and couples young and old. I have never found the place empty, and once you try it, you’ll understand why.

The build-your-own calzone is by far my favorite entree. The warm, crispy, hearty crust that encases your choice of veggies and other fillings, along with tofu doing a spot-on impression of ricotta cheese, is heavy enough that I have yet to polish one off all in one go. If you’re toying with the idea of veganism but terrified to take the plunge because gasp how will you live without cheese, let the calzone make its case for why you won’t be missing out.

The can’t-miss menu item is no doubt the garlic knots appetizer. Warm, doughy and crispy in all the right places and served with butter-like dipping oil, these knots will become one of the many reasons you are drawn back to Ethos.

The exceptional service is on par with the food in terms of quality. At my latest visit, three different waitstaff checked in on my friend and I, and in previous visits, the employees have always been warm, welcoming, and quick to offer kind compliments and recommendations.

If vegan food seems like a foreign land, coming to Ethos will be like stopping in a McDonald’s in another country. There’s no question why they have been named Best Vegetarian Food in Orlando by several publications for years in a row. And as a cherry on top of this metaphorical nondairy sundae (they do serve real ones at Ethos, by the way), the menu prices completely shut down the myth that “vegan” translates to “expensive.” I usually walk out of there having spent only around $10-$15.

If you’re in the Winter Park area, do not skip Ethos. Your taste buds and the planet will thank you.
